their energy1 talent and time to the dissemination of that knowledge which makes for purer and better foods--to the ,domestic ,science ,teachers of ,america4 ,in response to hundreds of requests from schools1 colleges and individuals for information regarding the different varieties of ,spices we have prepared this booklet1 and have endeavored to give as concisely as possible the facts necessary to a thorough understanding of the subject4 ,as there has hitherto been no complete compilation along this line1 it has been necessary to obtain from foreign sources much of the material1 while some of the illustrations represent weeks of patient research by our art department4 ,to the ,u4 ,s4 ,department of ,agriculture we are indebted for much valuable information1 and for this we wish to make due acknowledgment4 ,illustration3 7,capsicums7 ,chillie or ,guinea ,pepper ,japan ,bombay ,spanish ,paprika ,pod 7,chillies7 ,mombassa ,japan 7,white7 ,muntok ,singapore ,pod ,pepper ,black ,pepper ,tellicherry ,long ,pepper ,aleppy ,lampong ,natural size ,pepper and ,capsicums ,pepper is the dried berry of the pepper-plant 7,piper nigrum71 a climbing vine ten to twelve feet high1 indigenous to the ,east ,indies1 but cultivated in many tropical countries4 ,illustration3 ,a ,group of ,pepper ,mills ,the berries are harvested when they begin to turn red1 and the process of drying out blackens and shrivels them4 ,they are not picked separately1 but in spikes or bunches1 and are then placed on mats to dry4 ,at night the berries are placed under cover4 ,the average yield per vine is eight to ten pounds each year4 ,the different varieties of ,black ,pepper derive their name from the localities in which they are grown or the ports whence they are shipped1 as ,singapore1 ,lampong1 ,sumatra1 ,tellicherry1 ,acheen1 ,malabar1 ,trang1 etc4 ,white ,pepper ,this is obtained by decorticating or removing the skin from the fully ripened black peppercorns--accomplished by maceration4 ,white ,whole ,pepper grains are grayish white4 ,they are more nearly spherical in shape than the ,black ,pepper berries1 and have light-colored lines running from top to bottom4 ,the more common varieties are known as ,siam1 ,singapore and ,penang4 ,red ,pepper ,the ,u4 ,s4 ,standards describe ,red ,pepper as the dried ripe fruit of any species of capsicum1 a genus of the nightshade family indigenous to the ,american tropics4 ,it is now cultivated in nearly all warm and temperate countries1 both commercially and in the kitchen-garden4 ,the leading commercial varieties are ,zanzibar1 ,africa1 ,indias1 and ,japan4 ,paprika ,paprika is botanically described as ,capsicum annuum4 ,the pods are large and brilliant to dark red4 ,it grows in the temperate and torrid zones4 ,it is cultivated principally in ,spain 7,pimiinton7 and ,hungary4 ,the ,spanish-grown product is sweet and mild1 the ,hungarian usually of a mildly pungent flavor4 ,paprika is used in cooking for its color as well as flavor4 ,it is rapidly finding favor among ,american housewives4 ,illustration3 7,cinnamon or ,cassia7 ,ceylon ,cinnamon ,batavia ,cinnamon ,chinese ,cassia 7,cinnamon7 ,saigon ,rolls ,china ,cassia ,rolls ,cassia the market in long1 quill-like rolls1 the smaller rolls being incased in the larger4 ,the small dark spots on the outer surface correspond to points where the leaves were attached to the stem4 ,true ,cinnamon is native to the ,island of ,ceylon1 but is cultivated in tropical ,asia1 ,sumatra and ,java4 ,the yield of ,ceylon ,cinnamon is relatively small4 ,its use in the ,united ,states is limited4 ,cassia ,the ordinary commercial ,cassia is the bark of the ,cinnamomum ,cassia1 which comes from ,china1 ,japan1 ,indo-,china and ,india4 ,it is usually darker in color than true ,cinnamon1 rougher1 and about four times as thick4 ,cinnamon and ,cassia range in value according to type and quality1 although much depends on actual flavoring strength4 ,they are chiefly valued in the order named--,saigon1 ,batavia or ,java and ,china4 ,those desiring a pure ,ceylon ,cinnamon can secure it from ,mc,cormick ,company of ,baltimore1 ,importers and ,grinders of ,spices4 ,choicest ,cassia1 in ,the ,nutmeg-tree1 genus ,myristica 7natural order ,myristicace71 native of the ,malay ,archipelago1 usually grows to a height of twenty to thirty feet4 ,while the greater part of the world's supply of both ,nutmegs and ,mace comes from the ,banda ,islands1 the ,west ,indies are by no means to be overlooked4 ,the ,nutmeg fruit is about three inches long and about two inches in diameter4 ,it includes1 first1 the outer or fleshy membranous part2 second1 the substance covering the outer shell of the ,nutmeg1 known as ,mace1 next the shell1 and finally the kernel or commercial ,nutmeg4 ,after harvesting1 which in some places is done with long forked sticks or bamboo poles1 the red colored network 7,mace7 is removed and the nuts are placed over a fire in mesh bottom receptacles1 where they remain for perhaps a month1 being kept about ten feet away from the flames4 ,they are next exposed to the sun for two or three hours daily for several days1 or until the kernels rattle within the shell4 ,they are then removed from the shell and assorted into three general grades4 ,among the many varieties of ,nutmegs the ,singapore1 ,penang1 ,west ,indian and ,macassars are most esteemed1 the price being regulated by the type1 size and quality of the nut4 ,during the past few years ground ,nutmeg has been placed on the market and is steadily finding favor with ,american housewives4 ,illustration3 ,mc,cormick's ,bee ,brand ,pepper ,mace ,mace is carefully removed from the shell surrounding the kernel of the ,nutmeg by hand1 although a knife is sometimes employed4 ,it is then placed on mats or trays to dry in the sunshine4 ,of late years1 however1 artificial drying has proven so successful that it is rapidly supplanting the old method in which the sunshine dissipated some of the virtues of the ,mace4 ,several months are required to cure it4 ,during this time it changes from a crimson to a blood red and later to the yellowish or golden brown color1 in which state it is found on the market here4 ,the ,penang or ,banda ,mace is probably the most desirable1 with the ,siauw and ,batavia following in the order named4 ,great care must be exercised in the grinding of ,mace1 as it is very rich in volatile oil4 ,bee ,brand ,ground ,mace is prepared in mills especially designed for the purpose4 ,nutmegs and ,mace imported by ,mc,cormick ,company are marketed as ,bee and ,banquet ,brands4 ,illustration3 7,ginger7 ,ginger ,plant1 ,flower and ,root ,african ,ginger ,root ,jamaica ,japan ,natural size ,ginger ,unlike the ,spices treated in this series1 ,ginger is the root-stock of a plant known botanically as ,zingiber officinale1 an annual herb1 three or four feet high4 ,it is a native of ,india and ,china1 but is grown extensively in tropical ,america1 ,africa and ,australia4 ,the plant endures a wide range of climate4 ,it may be grown at sea level or in mountainous regions1 provided the rainfall be abundant or irrigation adopted4 ,it is found cultivated from the ,himalaya ,mountains1 #ejjj feet above sea level1 to ,cape ,comarin4 ,the root is dug when the plant is a year old and after the stalk has withered4 ,black ,ginger1 of which ,calcutta and ,african are the common varieties1 is produced by scalding the freshly dug roots4 ,this prevents sprouting4 ,white ,ginger is the decorticated product1 the chief varieties being ,jamaica1 ,cochin and ,japan4 ,jamaica is the most esteemed4 ,jamaica ,ginger is best known and most used here1 although both ,cochin and ,african ,ginger are imported in a large way4 ,the different varieties of ,ginger are imported by ,mc,cormick ,company1 who distribute them under the ,bee ,brand and ,banquet ,brand guarantee4 ,green ,ginger is the undried root4 ,that received in the ,united ,mexico1 ,costa ,rica and ,venezuela as well4 ,the highest quality ,pimento comes from the ,island of ,jamaica4 ,the ,mexican berry1 while handsome in appearance1 is inferior in flavoring quality4 ,illustration3 ,packeting ,spices ,the trees usually grow in groups of from five to twenty1 but are sometimes found in forests4 ,after the tree has attained a certain growth1 the underbrush and other ,pimentos are cut away1 leaving the trees about twenty-five feet apart4 ,the ,pimento flowers twice each year1 but bears only one crop of berries4 ,the problem of harvesting is the most serious with which the planter has to contend4 ,it is difficult to secure help among the indolent natives1 and as the harvest season is short--because the berries must be picked just before they ripen--the loss from over-ripening is very great4 ,after harvesting1 the berries are exposed daily to the sun for a period of from seven to twelve days1 being placed under cover each night4 ,pimento1 or ,allspice1 as it is generally known1 is exported principally from ,kingston1 ,jamaica1 in #abj to #acj lb4 bags1 about one-third of the crop coming to the ,united ,states1 while the remainder finds its way to ,england1 whence it is exported to other countries4 ,as its common name implies1 ,allspice has a flavor which is suggestive of the combined flavors of many spices4 ,mc,cormick ,company import only the evergreen 7,caryophyllus1 ,aromaticus or ,eugenia caryophyllata7 belonging to the ,myrtle family1 averaging in height twenty to forty feet4 ,the ,clove-tree is cultivated in ,ceylon1 ,india1 ,mauritius1 the ,west ,indies and ,zanzibar4 ,the different varieties derive their names from the district of origin or the city of exportation4 ,cloves from ,amboyna1 ,penang and ,zanzibar are perhaps best known and are in greatest demand4 ,the flowers grow in clusters4 ,the green buds change to a reddish hue1 at which stage they are removed from the tree1 spread in the sun and allowed to dry4 ,when allowed to fully fruit1 the bud develops into a hard seed an inch long1 with a pulpy cover4 ,this is called ,mother of ,cloves4 ,the tree yields only one crop a year1 the yield under normal conditions being about #cjj pounds to the acre4 ,the average consumption is estimated at #aa1jjj1jjj pounds per year4 ,there are a number of varieties of ,cloves resembling each other in appearance1 but vastly different in pungency and flavoring value4 ,the slender stems bearing the closed buds have1 to a limited degree1 the aromatic clove flavor1 and as they sell for a very small fraction of the cost of ,cloves1 are frequently powdered and used for reducing the cost of ,powdered ,cloves1 at the expense of quality and of common honesty4 ,mc,cormick ,company do not import1 buy or sell ,clove ,commonly spelled ,cardamon4 ,the ,cardamoms of ,java1 ,ceylon and ,madagascar are much alike4 ,tapioca ,the product of the roots or tubers of the ,manioc or ,cassava is known as ,tapioca4 ,the plant is native to ,brazil1 but is cultivated in ,jamaica and the ,far ,east4 ,there are two kinds of ,tapioca--,pearl and ,granulated4 ,both are made from the same rootstock under a slightly different process4 ,marjoram ,the leaf of a shrubby plant1 a genus of the ,mint family1 native to the shores of the ,mediterranean2 usually called ,sweet ,marjoram4 ,mustard ,mustard-,seed comes from ,russia1 ,germany1 ,england and ,holland1 and to some extent from ,california4 ,there are two chief divisions1 yellow and brown4 ,the brown seed comes largely from ,italy and is known as ,bari4 ,the term ,trieste is frequently applied to all brown ,mustard-,seeds4 ,mustard-,seed contains two oils1 known as ,essential and ,fatty4 ,the ,essential ,oil is soluble in water4 ,in flavor and odor it closely resembles horseradish4 ,the ,fatty ,oil is mild and tasteless1 insoluble in water1 and is sometimes used in place of olive oil4 ,in manufacturing ,mustard-,flour the seed is warmed1 subjected to hydraulic pressure1 which releases from fifteen to twenty-five per cent of the fatty oil4 ,the residue is called ,mustard-,cake4 ,it is ground and bolted on fine sieves1 separating the ,mustard bran or hulls from the interior1 making ground mustard or flour4 ,brown seed contains a larger percentage of the essential oil1 and1 therefore1 makes a hotter or stronger flour than the yellow variety1 and must be blended with flour from yellow seed4 ,sage ,a perennial shrub about two feet high1 native to ,southern ,europe1 but cultivated in this country as a garden plant4 ,bee ,brand ,rubbed ,sage is the finest ,sage imported4 ,it is rubbed and ready for use4 ,illustration3 7,vanilla7 ,aerial ,root of ,vanilla ,vanilla ,bean ,green ,bean ,natural size ,vanilla-,bean ,the ,vanilla-,bean is the fruit of the ,vanilla planifolia or flat-leaved ,vanilla vine and is the source from which pure or true ,vanilla ,extract is made4 ,this climbing perennial belongs to the ,orchid family and is indigenous to ,central and ,south ,america1 but reaches its perfection of flavor in ,mexico4 ,the ,mexican bean sometimes attains a length of ten inches4 ,illustration3 ,one of the ,extract ,stills ,when gathered1 the beans are yellowish green1 fleshy and without odor4 ,their color and odor is developed by a process of fermentation or sweating1 which differs in various countries4 ,the best method consists of sun-drying for about a month1 the beans being pressed alternately between the folds of blankets and exposed to the air4 ,after curing they are tied in bundles4 ,vanilla-,beans when cured exude and become covered with fine frostlike crystals of vanillin1 the important active flavoring principle4 ,next in value to the ,mexican bean comes the ,bourbon1 which term is applied to all the ,vanilla-,beans grown in the islands of the ,indian ,ocean1 off the east coast of ,africa1 of which ,madagascar1 ,runion1 the ,comores1 ,mauritius and the ,seychelles are most important4 ,these beans are shorter than the ,mexican1 decidedly inferior in flavoring quality1 and1 therefore1 less expensive4 ,they more nearly resemble the ,tonka bean in odor4 ,the cheapest beans are the ,tahitis and so-called vanillons or beans of the wild ,vanilla 7,vanilla pompona74 ,they are little used in extract making1 and properly so1 as they have neither strength nor flavor4 ,the ,tonka bean is here mentioned simply because it is so largely used in the manufacture of imitation ,vanilla ,extracts4 ,it is the seed of the ,dipterix odorata1 native to ,guiana4 ,the pod is almond shaped and contains a single seed shaped like a kidney-bean4 ,this bean is dark in color1 having a thin1 shiny1 brittle skin1 containing a two-lobed oily kernel4 ,a hundred years ago these beans were found in the snuffbox of every gentleman and in the handkerchief case of every lady4 ,further information regarding the ,vanilla-,bean may be found under ,flavoring ,extracts on page #bb4 ,illustration3 7,tea7 ,chinese ,tea ,plant and ,flowers ,chinese ,tea ,leaf ,japanese ,tea ,leaf ,ceylon ,tea ,leaf ,india ,tea ,leaf ,seeds ,natural size ,tea ,commercial tea is the prepared leaf or leaf-bud of an evergreen1 indigenous to ,asia1 which in its wild state attains the general proportions of the ,american peach-tree4 ,botanically1 it is known as ,camellis ,thea or ,thea ,chinensis4 ,under cultivation1 it is kept pruned to within three to five feet high4 ,the constant pruning encourages the growth of new branches and new leaves4 ,the value of the ,tea is in the young tender leaf4 ,illustration3 ,testing ,tea ,teas are divided into two groups1 which differ chiefly in the method of curing4 ,a tea-plant may produce a leaf which commercially may be either black or green1 depending on the treatment4 ,green tea is prepared by steaming the fresh green leaf and then drying it4 ,in this way the bright color is preserved4 ,black ,tea is the result of oxidization or fermentation1 caused by exposing the leaves to the sun1 which turns them black4 ,the best ,teas are made from the young leaves1 the different varieties being graded according to their age and position on the shoot4 ,tea is produced in large quantities in ,china1 ,japan1 ,india and the islands of ,ceylon1 ,java and ,formosa4 ,there are about #bjj varieties of ,teas1 and1 perhaps1 ten times as many flavors4 ,tea ranges in value from a few cents per pound for stems up to #aj4jj for the very finest leaf4 ,the ,government inspects all teas entering the ,united ,states1 and those below a certain standard are not allowed to enter the country4 ,tea drinking in the ,united ,states is increasing1 but the consumption is still far behind that of many other countries4 ,illustration3 ,banquet ,extra ,fancy ,blended ,tea ,the average ,american housewife has not given to the brewing of tea the same careful consideration she gives to the preparation of other beverages4 ,good ,tea brewed right is a delicious beverage1 but certain rules must be observed4 ,complete directions for the perfect brewing of ,tea appear on each package of ,banquet ,brand4 ,under this brand all the desirable varieties are packed as well as a remarkable blend4 ,our publication1 8,tea1 ,its ,early ,history1 and the ,three ,colonial ,american ,tea ,parties10 will be mailed free upon request4 ,flavoring ,extracts ,the ,united ,states ,agricultural ,department1 ,circular ,no4 #ai1 contains the standards for foods4 ,among these are standards for ,flavoring ,extracts4 ,by this regulation ,extract of ,lemon must contain at least #f4d ounces of ,oil of ,lemon to #a gallon of finished product1 or1 as the circular puts it1 #e per cent ,oil of ,lemon by volume1 and ,vanilla ,extract the extractive matter from at least #ac4ce ounces of the bean to the gallon of finished product4 ,the flavor is extracted from the bean by a mixture of alcohol and water1 as the resins in the ,vanilla-,bean will not impart their flavor to alcohol alone or to water alone1 but to a mixture containing from #dj to #fj per cent of alcohol1 according to character of bean4 ,long experience is required to accomplish the results desired4 ,the ,vanilla-,beans brought into this country range in price about as follows3 ,mexican1 #c4ej to #f4jj per pound4 ,bourbon1 #c4jj to #e4ej per pound4 ,guadalupe1 #c4jj to #e4ej per pound4 ,seychelles1 #c4be to #d4ej per pound4 ,tahiti1 #a4ge to #b4ej per pound4 ,and a large variety1 such as ,java1 ,south ,american and others1 ranging in price from #b4ge to #e4jj per pound4 ,these prices represent wholesale prices and vary from time to time4 ,the use of ,tahiti ,beans1 coming from the ,islands of ,tahiti1 has grown very largely in the last few years4 ,they are much used by manufacturers making the cheaper extracts4 ,the ,vanilla-,bean dries out very quickly1 but if properly cared for and protected does not lose its strength4 ,in fact1 the flavor greatly improves with age4 ,the same beans can be treated for extract by different persons and an entirely different quality of goods produced1 just as two cooks can take the same kind of flour and one will produce a delightful loaf of bread while the bread of the other will not be fit to eat4 ,we age our ,bee ,brand ,extracts for two years in white oak casks before placing them on the market4 ,thus they become mellow and have a rich1 dainty bouquet1 which cannot be obtained by any other process4 ,the minimum cost of carrying large vats of ,vanilla is about #ab to #ae per cent per year4 ,a fine1 properly aged ,extract of ,vanilla1 such as ,bee ,brand1 made from the best beans1 would cost from #h4jj to #i4jj a gallon to manufacture1 and yet 8,strictly ,pure ,u4 ,s4 ,standard ,extracts0 can be made to cost not over #c4ej per gallon4 ,frequently you will find that a cheap pure ,extract of ,vanilla is almost as strong as the fine1 or high priced1 ,bee ,brand goods1 but its flavor is rank and it has not the same bouquet and delicacy of flavor1 the comparison between the two being the same as that between cheap cigars 7three for #e cents71 which may be just as strong as a fine ,havana1 or stronger1 which costs #be cents1 but the latter has a flavor and quality which the former do not approach4 ,the average consumer thinks if an ,extract is pure it must be good1 and is satisfied with that statement4 ,this belief on the part of the consumer is largely due to the fact that many jobbers and large retailers want their goods under their own names1 requesting the manufacturer to put up the cheapest ,extract that will comply with the law1 regardless of the kind of beans or other materials used in its manufacture4 ,they simply ask for goods that comply with ,state and ,national laws1 but you can readily see what the word 8pure0 means under this condition4 ,these jobbers and retailers think when they have complied with the law they have done all that is necessary4 ,we refuse positively to sell our ,bee ,brand goods1 or any other ,flavoring ,extracts1 under any other name than our own4 ,the consumer must realize that purity is one thing1 strength another1 but quality1 the cardinal feature by which to judge1 can be obtained only by buying goods under the name of a reputable manufacturer4 ,at one time the use of the ground or pulverized ,vanilla-,bean directly in the article to be flavored was considered by bakers and ice-cream manufacturers a strong card to feature in their advertising4 ,since the introduction of ,domestic ,science into so many of our educational institutions1 with the subsequent general interest which the movement has aroused1 the ,american housewife has come to learn that by the use of the ground bean only one of the several flavoring principles is obtained1 i4 e41 vanillin4 ,the other active agents may be obtained only by intensive processing1 and thus a full-toned extract is secured4 ,there is a great deal of 8,vanilla ,compound10 or 8,imitation ,vanilla10 sold4 ,this is made always from manufactured ,vanillin or ,coumarin1 or both4 ,the natural ,vanillin comes from ,vanilla-,beans themselves4 ,put a fresh ,vanilla-,bean where it is very cold and crystals will form on the outside4 ,these crystals are pure ,vanillin4 ,for a long time this was thought to be the only flavoring principle of the ,vanilla-,bean1 but it has been proven to be only one of a number4 ,the ,vanillin in general use is manufactured by artificial means4 ,it is a white powdery substance with a strong ,vanilla-like flavor1 but it lacks that softness which only ,vanilla-,beans produce4 ,in the process of making cheap ,extracts1 ,vanillin is frequently toned up in strength and pungency with ,coumarin4 ,coumarin occurs naturally in ,tonka ,beans and ,deer ,tongue4 ,the ,tonka ,bean is a short1 stumpy bean about #a to #b inches long by inch wide1 and is used for flavoring tobacco4 ,coumarin is made commercially from the leaves of ,virginia ,deer ,tongue and is manufactured in very large quantities1 as it is cheaper than that made from ,tonka ,beans4 ,it may be of interest to know that ,bee ,brand ,flavoring ,extracts were awarded the only ,gold ,medal at the ,jamestown ,exposition1 and that we now have the only ,gold ,medal awarded ,flavoring ,extracts since the ,national ,pure ,food laws have been in existence4 ,the ,committee on ,awards had no connection with the ,exposition ,company1 as it was appointed personally by ,ex-,president ,roosevelt1 who named ,dr4 ,harvey ,t4 ,wiley as chairman4 ,the ,bee ,brand ,manual of ,cookery ,this book is the result of many years of conscientious effort to produce a work which would be worthy of the title--,the ,blue ,book of the ,culinary ,art4 ,the old ,colonial homes of ,maryland and ,virginia1 long famous for their 8,southern ,cooking10
