repeated request of friends1 ,i am writing this little book4 ,in its compilation1 ,i have had in view both the ,anglican and ,roman communions4 ,there are many who keep the ,fasts and ,abstinences prescribed by their ,church1 and there are many more who would do so if their food was served up and cooked in a healthy way4 ,as a rule1 fish and vegetables are very little understood in this country1 and even in the houses of the better class one sees little else than the eternal boiled and fried fish4 ,as to vegetables1 they are out of it altogether4 ,if this be the case where money is no object1 how much harder is it for those who are obliged to make the most of everything8 ,i do not pretend to teach in this little book1 only to give a few novel and useful recipes that most housewives will find really good and economical1 and also to show that a non-flesh diet can be and is both healthy and appetising4 ,the book will be found useful by others than those for whom it is specially written1 and most of the recipes will be practicable at all times of the year4 ,a word in conclusion to the careful housewife in getting tinned fish4 ,always get the best brand2 it is not wise to go in for cheap goods in this line4 ,i cannot speak too highly of ,edwards' ,desiccated ,soups4 ,they make delicious soups of themselves1 and in conjunction with other things they have no equal4 ,their tomato is simply invaluable2 ,i would not be without it for anything4 ,to those who find pastry indigestible ,i would recommend them to try ,coombs' ,eureka ,flour2 it makes delicious pastry1 and requires no baking powder1 and it has the advantage of being thoroughly digestible4 ,i have mentioned how to use all these in most of the recipes4 ,i have not made any pretence to make this what is called a high-class cookery book2 my aim and object is to bring it within the range of most people1 while many of the dishes are good enough for any high-class table1 and would be found a welcome and novel addition4 ,,grace ,,johnson4 ,,fast-,,day ,,cookery4 ,,soups4 #a4 ,oyster ,soup4 ,open one dozen oysters1 preserve the liquor4 ,put into a pan two ounces of butter1 with an onion and very much like chicken or rabbit4 ,i have put all the fish recipes together1 both those suited to entres and the more substantial4 ,i have done this because it is rather a difficult matter to arrange
