,fitments ,by ,mary ,ann ,wheelwright ,through the glamour of the ,colonial we are forced to acknowledge the classic charm shown in late seventeenth and early eighteenth century window designs4 ,developed1 as they were1 by ,american carpenters who were stimulated by remembrance of their early impressions of ,english architecture received in the mother land1 there is no precise or spiritless copy of ,english details2 rather there is expressed a vitality that has been brought out by earnest effort to reproduce the spirit desired4 ,undoubtedly the lasting success of early ,american craftsmanship has been due to the perfect treatment of proportions1 as related one to the other4 ,that these are not imitations is proved by an occasional clumsiness which would be impossible1 if they were exact copies of their more highly refined ,english prototypes4 ,the grasp of the builder's mind is vividly revealed in the construction of these windows1 for while blunders are often made1 yet successes are much more frequent4 ,they are evolved from remembered motives that have been unified and balanced1 that they might accord with the exterior and be knitted successfully into the interior trim4 ,some of these windows still grace seventeenth century houses1 and are found not only on old southern plantations1 but all through ,new ,england1 more especially along the sea coast4 ,true products are they of ,colonial craftsmanship1 brought into existence by skilled artisans1 who have performed their work so perfectly that today they are found unimpaired1 striking a dominant note in accord with the architectural feeling of the period4 ,there is no question but that windows such as these lend character to any house1 provided1 of course1 that they coincide with the period4 ,doubtless the designing of modified ,colonial houses is responsible1 in part1 for the present-day revival of interest1 not solely in windows of the ,colonial period1 but also in that which immediately preceded and followed it4 ,illustration3 ,,group ,,windows ,,on ,,stairway ,the first ornamental windows were of the casement type1 copied from ,english cottage homes4 ,like those1 they opened outward1 and were designed with small panes1 either diamond or square shaped4 ,as they were in use long before glass was manufactured in this country1 the ,colonists were forced to import them direct from ,england4 ,many were sent ready to be inserted1 with panes already leaded in place4 ,proof of this is afforded by examples still in existence4 ,these often show strange patches or cutting4 ,the arrangement of casements varies from single windows to groups of two or three1 and they were occasionally supplemented by fixed transoms4 ,surely no phase of window architecture stands out more conspicuously in the evolution of our early designs than the casement with its tiny panes1 ornamented with handwrought iron strap-hinges which either flared into arrow heads1 rounded into knobs1 or lengthened into points4 ,that they were very popular is shown from the fact that they withstood the changes of fashion for over a century1 not being abolished until about the year #agjj4 ,little drapery is needed in casement windows where they are divided by mullions4 ,the ,english draw curtain is admirable for this purpose4 ,it can be made of casement cloth with narrow side curtains and valance of bright material4 ,a charming combination was worked out in a summer cottage4 ,the glass curtains were of black and white voile with tiny figures introduced4 ,this was trimmed with a narrow black and white fringe1 while the overdrapery had a black background patterned with old rose4 ,illustration3 ,,grouped ,,windows ,,with ,,square ,,panes1 ,,lace ,,glass ,,curtains ,,and ,,cretonne ,,over ,,curtains ,in the field of architectural progress1 more especially during the last few years1 there have arisen vast possibilities for the development of odd windows4 ,these1 if properly placed1 showing correct grouping1 are artistic1 not only from the outside1 but from the inside as well4 ,the artistic woman1 realizing the value of color1 will fill a bright china bowl with glowing blossoms and place it in the center of a wide window sill1 where the sun1 playing across them1 will carry their cheerful color throughout the room4 ,she also trains vines to meander over the window pane1 working out a delicate tracery that is most effective1 suspending baskets of ferns from the upper casement1 that she may break the length of her ,colonial window4 ,thus through many artifices she causes her simple room to bloom and blossom like a rose4 ,illustration3 ,,for ,,french ,,doors1 ,,use ,,muslin ,,with ,,silk-,,lined ,,overhang ,the progress made in window architecture is more apparent as we study the early types4 ,then small attention was paid to details1 the windows placed with little thought of artistic grouping4 ,their only object to light the room1 often they stood like soldiers on parade1 in a straight row1 lining the front of the house4 ,out of the past has come a vast array of period windows1 each one of which is of interest4 ,they display an unmistakable relationship to one another1 for while we acknowledge that they differ in detail and ornamentation1 yet do they invariably show in their conception some underlying unity4 ,there is no more fascinating study than to take each one separately and carefully analyze its every detail1 for thus only can we recognize and appreciate the links which connect them with the early ,american types4 ,we happen upon them not only in the modified ,colonial structures1 but in houses in every period of architecture4 ,it may be only a fragment1 possibly a choice bit of carving2 or it may be a window composed in the old-fashioned manner of from nine to thirty panes1 introduced in ,colonial days for the sake of avoiding the glass tax levied upon them if over a certain size4 ,a charming example of a reproduction of one of these thirty-paned windows may be seen in a rough plaster house built in ,salem1 after the great fire4 ,the suggestion was taken from an old historic house in a fine state of preservation in ,boxford1 ,mass4 ,the first ,american homes derived their plans and their finish from medieval ,english tradition4 ,they were forced to utilize such materials as they were able to obtain1 and step by step they bettered the construction and ornamentation of their homes4 ,as increasing means and added material allowed1 they planned and executed more elaborately1 not only in size and finish1 but in the adding of window casings1 caps1 and shutters4 ,the acme of ,colonial architecture was reached with the development of the large square houses with exquisitely designed entrances and porticos4 ,these often showed recessed and arched windows1 also those of the ,palladian type4 ,at the ,lindens1 ,danvers1 ,mass41 a memory-haunted mansion1 may be seen one of the finest examples of these recessed windows4 ,this famous dwelling1 the work of an ,english architect1 who built it in about #aggj1 is linked with ,american history through its use by ,general ,gage as his headquarters during the ,revolution4 ,the recessed windows that are found here reveal delicate mouldings in the classic bead and filet design1 and are surmounted by an elaborate moulded cornice1 which lends great dignity to the room4 ,this is supported by delicate pilasters and balanced by the swelling base shown below the window seats4 ,such a window as this is no mere incident1 or cut in the wall2 on the contrary1 it is structural treatment of woodwork4 ,another feature of pronounced interest may be noted on the stair landing1 where a charming ,palladian window overlooks the old-fashioned box-bordered garden that has been laid out at the rear4 ,we have dwelt1 perhaps1 too much on the old ,colonial types1 neglecting those of the present day1 but it has been through a feeling that with an intimate knowledge of their designs we shall be better able to appreciate the products of our own age1 whose creators drew their inspiration from the past4 ,a modern treatment of windows appears in our illustration4 ,illustration3 #ge ,,beacon ,,street1 ,,boston ,illustration3 ,,thatched-,,style ,,cottage ,,for ,,american ,,suburbs ,the ,tiny ,house ,by ,ruth ,merton 7,concluded from ,october7 ,if1 some fine day1 all housewives awoke to the fact that most of the trouble in the world originates in the kitchen1 there would shortly be a little more interest in kitchen problems and not so much distaste for and neglect of this important part of the house4 ,of course1 women will cry out that we have never in our lives been so intent on just that one subject1 kitchens1 as we are today4 ,i admit that there is a good deal of talk going on which might lead one to believe that vacuum cleaners and electric-washing machines1 etc41 are to bring about the millennium for housekeepers2 and there is also a good work going forward to make of housework a real profession4 ,but1 until in the average home there comes the feeling that the kitchen--the room itself--is just as much an expression of the family life and aims and ideals as the living room or any other room1 we shall be only beating about the bush in our endeavor to find a remedy for some of our perplexing troubles4 ,nowadays1 women who are doing much work out in the big world--the so-called enfranchised women--are many of them proving that they find housework no detriment to their careers and some even admit that they enjoy it4 ,but so far most of them have standardized their work and systematized it1 with the mere idea of doing what they have to do efficiently and well1 with the least expenditure of time and energy4 ,and they have more than succeeded in proving the drudgery plea unfounded4 ,now1 however1 we need something more4 ,we need to make housework attractive2 in other words1 to put charm in the kitchen4 ,there is one very simple way of doing this1 that is to make kitchens good to look at1 and inviting as a place to stay and work4 ,for the professional1 scientifically inclined houseworker1 the most beautiful kitchen may be the white porcelain one1 with cold1 snowy cleanliness suggesting sterilized utensils and carefully measured food calories4 ,but to the woman whose cooking and dishwashing are just more or less pleasant incidents in a pleasant round of home and social duties1 the kitchen must suggest another kind of beauty--not necessarily a beauty which harbors germs1 nor makes the work less conveniently done1 but a beauty of kindly associations with furniture and arrangements4 ,who could grow fond of a white-tiled floor or a porcelain sink as they exist in so many modern kitchens6 ,and as for the bulgy and top-heavy cook stoves1 badly proportioned refrigerators1 and kitchen cabinets--well1 we should have to like cooking very well indeed before we could feel any pleasure in the mere presence of these necessary but unnecessarily ugly accompaniments to our work4 ,we have come to think of cleanliness as not only next to godliness1 but as something which takes the place of beauty--is beauty4 ,this attitude is laziness on our part1 for we need sacrifice nothing to utility and convenience1 yet may still contrive our kitchen furniture so that it1 also1 pleases the senses4 ,with a little conscientious reflection on the subject we may make kitchens which have all the charm of the old1 combined with all the convenience of the new2 and woman will have found a place to reconcile her old and new selves1 the housewife and the suffragist1 the mother-by-the-fireside and the participator in public affairs4 ,the family will have found a new-old place of reunion--the kitchen6 ,granted then that our tiny house has a kitchen-with-charm1 and an other room1 the rest of the available space may be divided into the requisite number of bed and living rooms1 according to the needs of the family4 ,illustration3 ,,kitchen ,,for ,,thatched-,,style ,,cottage ,there is only one other very important thing to look out for2 that is the matter of closets4 ,there is no rule for the number of closets which will make the tiny house livable1 but ,i should say1 the more the merrier4 ,if there is ever question of sacrificing a small room and gaining a large closet1 by all means do it1 for absolute neatness is the saving grace of small quarters1 and storage places are essential1 if one does not wish to live in a vortex of yesterday's and tomorrow's affairs with no room to concentrate on the present4 ,illustration3 ,,first-,,floor ,,plan ,,of ,,thatched ,,cottage ,inside and outside the tiny house must conform to one law--elimination of non-essentials2 and the person who has a clear idea of his individual needs and has also the strength of will to limit his needs to his circumstances1 will find in his tiny house a satisfaction more than compensating for any sacrifices he may have made4 ,no one doubts that it is a sacrifice to give up a lesser pleasure even to gain the summum bonum and that it does take will power to keep oneself from weakly saying in the face of temptation1 ,oh1 well6 what does it matter6 ,my little house would perhaps be better without that1 but ,i have grown accustomed to it1 let it stay6 ,such weakness is fatal in a tiny house4 ,but how much more fatal in a tiny garden6 ,oh6 the waste lands which lie beneath the sun trying to call themselves gardens6 ,oh6 the pitiful little plots1 unfenced1 unused1 entirely misunderstood by people who stick houses in the middle of them and call them gardens6 ,no amount of good grass seed1 or expensive planting1 or well-cared-for flowers and lawns will ever make the average suburban lot anything but a lot1 and most of them might as well1 or better1 be rough1 uncultivated fields for all the relation they bear to the houses upon them or the use they were intended for4 ,it is to be supposed that when a man gives up the comforts of town apartments and hies him to the country1 it is the garden1 the outdoors1 which lures him4 ,why is it1 then1 that he seems to take particular pains to arrange his garden so that it is about as much his own as ,central ,park is8 ,it might give the average man a great deal of pleasure to be able to say to all the passersby on the ,mall1 ,this little bit of the ,park belongs to me6 ,i cut that grass1 ,i weed those flower beds in the evening when ,i come home from the office2 and every ,saturday afternoon ,i take the hose and thoroughly soak that bit of lawn there1 you may see me at it any week in the summer4 ,but then1 we are not dealing with the fictitious average man1 and we firmly believe that many commuters wonder deep down in their hearts why it is they get from their gardens so little of the pleasure they anticipated when they came to live out of the city4 ,any one who has traveled abroad1 has admired and perhaps coveted the gardens of ,england1 ,france1 and ,italy4 ,their charm is undeniable1 and thought to be too elusive for reproduction on ,american soil without the aid of landscape gardeners and a fair-sized fortune4 ,just why we1 as a nation1 are beset by the idea of reproducing instead of originating beautiful gardens is a question apart from this discussion4 ,but as soon as we try to develop1 to their fullest extent1 the advantages of our climate1 and soil1 in combination with our daily life as a people1 we shall produce gardens which will equal1 without necessarily resembling1 those of other countries4 ,in every case we must1 however1 follow the same procedure which every successful garden is built upon1 whether it be in ,mesopotamia or in ,long ,island ,city4 ,that is1 we must study the place1 the people1 and the circumstances4 ,the most general fault in ,american gardens is their lack of privacy4 ,no one claims that the high walls of ,italy and ,france or the impenetrable hedges of ,england would invariably suit the climate here4 ,but there are many ways to obtain seclusion without in any way depriving us of much-needed air in summer and sun in winter4 ,one way is by placing the house rationally upon its lot4 ,our custom has been to invariably build so that we had a front yard1 back yard1 and two side yards1 all equally important1 equally uninteresting1 unbeautiful and useless4 ,of course1 we have the porch which in a way takes the place of the outdoor living room1 always so attractive in foreign gardens4 ,and recently some laudable efforts are being made to incorporate the porch into the house1 where it belongs1 as a real ,american institution1 instead of leaving it disconsolately clinging to the outside and bearing no resemblance to the house either in shape or detail4 ,but after all1 a porch is a porch1 and a garden is a garden1 and one does not take the place of the other4 ,especially is this true of the tiny property4 ,if you have only ten feet of ground to spare outside your tiny house1 plan it so that every foot contributes to your joy at being in the country4 ,arrange it so that on a warm summer evening when the porch seems a bit close and dark1 you wander out into your garden and sit beneath the stars in quiet as profound as on the ,desert of ,sahara4 ,and in the winter1 let your garden provide a warm corner out of the wind1 where on a bright ,sunday morning you may sit and blink in the sun4 ,once you have got the desire for a room outdoors1 a real garden1 which is neither flower beds1 nor lawns1 nor hedges1 nor trees1 but a place for your comfort1 with all these things contributing to its beauty1 you will know as by divine inspiration where to put each flower and bush and path4 ,your planting will be no longer a problem for landscape architects1 but a pleasant occupation for yourself and family4 ,so then will your successful tiny house stand forth in its real garden1 an object of pride to the community and a tribute to one man who has refused to be the impossible average1 and has dared to build and plant for his own needs4 ,may he live forever and ever happy in his tiny house6 ,illustration3 ,,first-,,floor ,,pan ,,of ,,thatched ,,cottage ,you're ,not ,supposed ,to1 ,jimmie ,by ,eva ,j4 ,de,marsh ,huh6 exclaimed ,jennie1 there comes ,aunt ,rachel6 ,wonder what she wants now8 ,last time it was--no1 it wasn't--that was the time when ,jimmie ,upson and his wife were here4 ,how scandalized ,aunt ,rachel looked6 ,said ,i'd ruin my husband1 and a lot of such tommyrot4 ,as though ,jimmie and ,i couldn't afford a spread now and then6 ,i didn't1 and ,i won't1 tell ,aunt ,rachel that it was a special party and a special occasion4 ,of course1 ,i know ,jimmie isn't a millionaire1 but--it's none of ,aunt ,rachel's business1 so there6 she finished defiantly4 ,aunt ,rachel plodded blissfully up the walk4 ,jennie'll be glad to see me1 ,i know1 she mused4 ,she's high-headed1 but she knows a good thing when she sees it1 and ,i help her a lot4 ,jennie received her aunt with cordiality1 but not effusiveness4 ,to be discourteous was something she could not be4 ,besides1 she liked ,aunt ,rachel and pitied her idiosyncrasies4 ,why can't she be as nice when she goes to people's houses as she is when she is at home8 she mused4 ,i love to go there1 and everything is just perfect1 but the minute she steps outside the door--well1 we all know ,aunt ,rachel6 ,and she doesn't go home early either4 ,jimmie'll be furious4 ,she always calls him ',james' and asks after his health and--and everything4 ,i do so want him to like her1 but ,i'm afraid he never will4 ,i do wish ,i could get her interested in something4 ,i have it6 she exclaimed triumphantly4 ,the very thing6 ,aunt ,rachel looked up in surprise4 ,what's the matter1 ,jennie8 she inquired4 ,oh1 nothing much1 ,auntie6 ,i was just thinking aloud4 ,don't6 said ,aunt ,rachel4 ,it's a bad habit1 ,jennie--though ,i do do it myself1 sometimes4 ,sometimes6 ,jennie turned away to hide her smile4 ,why1 ,aunt ,rachel made a business of talking aloud6 ,as luck would have it1 the dinner went off to ,aunt ,rachel's satisfaction4 ,it was good1 but conservative4 ,jennie is learning1 thought the old lady to herself4 ,after ,i've been here a few times more1 she'll get along all right4 ,aunt ,rachel hadn't noticed that every idea ,jennie has used was1 strictly1 either ,jennie's own or her mother's4 ,how long does your aunt expect to stay8 asked ,jimmie1 casually1 while ,jennie was clearing the table4 ,aunt ,rachel was in the kitchen4 ,she prided herself on never being a burden on any one4 ,doubtless1 some of her friends would have preferred that she be4 ,most of us have a skeleton we do not wish to keep on exhibition4 ,oh1 ,i don't know1 maybe a week or two1 said ,jennie1 mischievously4 ,she hasn't told me yet4 ,oh6 replied ,jimmie1 in a disappointed voice4 ,business down town8 ,dinner at the ,club8 ,no1 he couldn't keep that up indefinitely4 ,besides1 what did a man want of a home1 if he wasn't going to live in it8 ,covertly1 ,jennie watched him4 ,she knew every expression of his face4 ,it amused her1 but she was sorry1 too4 ,jimmie wants awfully to flunk--and dassent1 was her mental comment4 ,anything on for this evening1 ,jimmie8 inquired ,jennie1 sweetly1 too sweetly1 ,jimmie thought4 ,he had heard those dulcet tones before4 ,yes--no6 stammered ,jimmie4 ,how he wished he had6 ,however1 as ,jennie said no more1 he dismissed the subject from his mind4 ,she probably didn't really mean anything1 anyway4 ,when ,james ,atherton reached home that evening1 he found the house lighted from top to bottom4 ,beautifully dressed women were everywhere1 and in their midst--,aunt ,rachel1 at her best6 ,ladies1 she exclaimed1 and ,jimmie paused to listen1 ,i am honored--more so than you can guess--at the distinction conferred upon me4 ,this afternoon you have seen fit to make me one of your leaders in a most important movement for civic betterment--an honor never before accorded a woman in this city--and ,i need not assure you that you shall not regret your choice4 ,as a member of the ,civic ,betterment ,committee of ,loudon1 ,i shall do my duty4 7,i bet she will6 commented ,jimmie1 sotto voce47 ,again ,i thank you6 went on ,aunt ,rachel4 ,there's a work for you and for me now to do1 and-- she paused impressively1 we will do it4 7,i'll bet on you every time1 ,auntie1 commented ,jimmie to himself47 ,jimmie ,atherton1 what in the world are you doing8 whispered an exasperated voice4 ,hurry1 ,jimmie1 hurry--do6 urged ,jennie4 ,dinner is almost ready to serve1 and you haven't even made the first move to dress4 ,hurry1 ,jimmie1 please6 ,and ,jimmie did4 ,he fairly sprinted into his clothes1 appearing presently fully clad and good to look upon4 ,bet you a nickel ,jennie couldn't have done that1 he reflected1 complacently4 ,women never can get a move on them1 where clothes are concerned4 ,that was the best evening ,aunt ,rachel had ever spent4 ,she was the center of attraction2 she had found a mission--not a desultory one1 but one far-reaching in scope1 so it seemed to her2 and like a war-horse1 she was after the charge4 ,jennie's plans went through without a hitch4 ,aunt ,rachel became1 not only a member of the ,committee on ,civic ,betterment1 but1 as well1 its head and1 in due season1 mayor of the little city itself4 ,under her active management1 ,loudon became noted as a model city of its size1 one good to look upon and good to live in4 ,crime fled1 or scurried to cover1 and ,aunt ,rachel blossomed like a rose4 ,one day when ,jimmie came home something seemed to please him greatly4 ,what do you think1 ,jennie1 he said1 ,aunt ,rachel is going to be married6 ,yes1 she is6 ,i've got it on the best of authority--the groom himself4 ,who8 gasped ,jennie4 ,why1 ,jimmie1 she just ,,hates men6 ,she's always said they were only a necessary evil4 ,yes1 ,i know1 smiled ,jimmie1 that's what she used to say1 but she'd never met ,jacob ,crowder then4 ,jacob ,crowder6 exclaimed ,jennie4 ,why1 ,jimmie1 he's as rich as ,croesus1 and he's always hated women as much as ,aunt ,rachel has hated men6 ,yes1 said ,jimmie1 but that was before he met ,aunt ,rachel4 ,he has been her righthand man for some time now1 and they've seemed to hit it off pretty well4 ,guess they'll get along all right in double harness4 ,when the girls and ,i steered ,aunt ,rachel into politics1 said ,jennie1 little we thought where it would all end4 ,i'm glad1 glad1 though6 ,aunt ,rachel is really splendid1 but ,i've always thought she was suffering from something4 ,now ,i know what--it's ingrowing ambition4 ,she will have all she can do now to take care of her own home and we won't see her so often4 ,oh1 ho6 ,so that's it8 smiled ,jimmie4 ,well1 you girls1 as has happened to many another would-be plotter before now1 have found things have gotten rather out of your hands1 haven't you8 ,jennie shrugged her shoulders4 ,we can have the wedding here1 can't we1 ,jimmie8 she asked1 somewhat wistfully4 ,jimmie wondered if she had heard him4 ,perhaps--and then again1 perhaps not4 ,i don't see where we come in on it1 he remarked4 ,it's a church affair1 you know4 ,oh6 said ,jennie4 ,but there'll be a reception1 of course1 and if she'll let us have it here1 ,i'll have every one of us girls she has helped so much in the past4 ,jimmie stared4 ,consistency-- he muttered4 ,what's that you said1 ,jimmie8 ,are you ill8 inquired ,jennie1 anxiously4 ,no6 replied ,jimmie1 it's you women6 ,i can't understand you at all6 ,you're not supposed to1 ,jimmie1 dear1 answered ,jennie sweetly4 ,somebody's ,cat ,by ,ida ,r4 ,fargo ,i never thought ,i should come to like cats4 ,but ,i have4 ,perhaps it is because1 as my ,aunt ,amanda used to say1 we change every seven years1 sort of start over again1 as it were2 and find we have new thoughts1 different ideas1 unexpected tastes1 strange attractions1 and shifting doubts4 ,or1 it may be1 we merely come to a new milestone from which1 looking back1 we are able to regard our own personality from a hitherto unknown angle4 ,we discover ourselves anew1 and delight in the experiment4 ,or1 it may all be1 as my husband stolidly affirms1 just the logical result of meeting ,sir ,christopher ,columbus1 a carnivorous quadruped of the family ,felidae1 much domesticated1 in this case1 white with markings as black and shiny as a crow's wing1 so named because he voyaged about our village1 not in search of a new world1 but in search of a new home4 ,he came to us4 ,it is flattering to be chosen4 ,he stayed4 ,but who could resist ,sir ,christopher8 ,my husband and my ,aunt ,amanda may both be right4 ,i strongly suspect they are4 ,i also strongly suspect that ,sir ,christopher himself has much to do with my change of mental attitude3 ,he is well-mannered1 good to look upon1 quite adorable1 independent and patient4 7,indeed1 if people were half as patient as my cat this would be a different world to live in47 ,more3 ,he has taught me many things1 he talks without making too much noise2 in fact1 ,i have read whole sermons in his soft purrings4 ,and ,i verily believe that many people might learn much from the family cat1 except for the fact that we humans are such poor translators4 ,we know only our own language4 ,more's the pity4 ,had ,i known ,sir ,christopher as a kitten1 doubtless he might have added still more to my education4 ,but ,i did not4 ,he was quite full grown when ,i first laid my eyes upon him4 ,he was sitting in the sun1 on top of a rail fence1 blinking at me consideringly4 ,the fence skirted a little trail that led from my back yard down to ,calapooia ,creek4 ,it seemed trying to push back a fringe of scrubby underbrush which ran down a hillside2 a fringe which was1 in truth1 but a feeler from the great forest of ,douglas fir which one saw marching1 file upon file1 row upon row1 back and back to the snows of the high ,cascades4 ,and the white of ,sir ,christopher's vest and snowy gauntlets was just as gleamingly clean as the icy frosting over the hills4 ,sir ,christopher1 even a cat1 believed firmly in sartorial pulchritude4 ,i admired him for that1 even from the first glance2 and1 afterward1 ,i put me up three new mirrors3 ,i did not mean to be outdone by my cat1 ,i intended to look tidy every minute1 and there is nothing like mirrors to tell the truth4 ,credit for the initial impulse1 however1 belongs to ,christopher ,c4 ,but that first morning1 ,i merely glanced at him1 sitting so comfortably on the top rail of the fence1 blinking in the sun4 ,somebody's cat1 said ,i1 and went on down to the creek to see if ,curlylocks had tumbled in4 ,coming back1 the cat was still there4 ,doubtless he had taken a nap between times4 ,but he might have been carved of stone1 so still he lay1 till my youngest1 tugging at my hand1 coaxed3 ,kitty--kitty--kitty4 ,muvver1 see my 'ittle kitty8 ,and ,i declare1 if ,sir ,christopher 7my husband and ten-year-old ,ted named him that very evening7 didn't look at me and wink4 ,then he jumped down and followed1 very dignified1 very discreet4 ,i attempted to shoo him back4 ,but he wouldn't shoo4 ,he merely stopped and seemed to consider matters4 ,or serenely remained far enough off to play safe4 ,meanwhile1 my youngest continued to reiterate3 ,kitty--kitty--kitty6 ,my 'ittle kitty6 ,no1 ,curlylocks1 said ,i1 it isn't your little kitty4 ,it is somebody's cat4 ,which merely shows that ,i knew not whereof ,i spoke4 ,sir ,christopher proceeded to teach me4 ,of course1 at first ,i thought his stay with us was merely a temporary matter2 like some folk1 he had decided to go on a visit and stay over night4 ,but when ,sir ,christopher continued to tarry1 ,i enquired1 ,i looked about1 ,i advertised--and ,i assured the children that some one1 somewhere1 must surely be mourning the loss of a precious pet2 some one1 sometime1 would come to claim him4 ,but no one came4 ,days slid away1 weeks slipped into months1 winter walked our way1 and spring1 and summer again4 ,sir ,christopher ,c4 had deliberately adopted us1 for he made no move toward finding another abiding place4 ,he was no longer ,somebody's cat1 he was our cat2 for1 indeed1 is not possession nine points of the law8 ,then one day when heat shimmered over the valley1 when the dandelions had seeded and the thistles had bloomed1 when the corn stood heavy and the cricket tuned his evening fiddle1 when spots in the lawn turned brown1 where the sprinkler missed1 when the baby waked and fretted1 and swearing1 sweating men turned to the west and wondered what had held up the sea breeze--,sir ,christopher missed his supper4 ,he vanished as completely as if he had been kidnapped by the ,air ,patrol4 ,three weeks went by and we gave him up for lost1 although the children still prowled about looking over strange premises1 peeping through back gates1 trailing down unaccustomed lanes and along ,calapooia ,creek1 for ,we might find him1 they insisted4 ,truly1 ,hope springs eternal4 ,perhaps1 he has gone back where he came from1 said ,daddy4 ,perhaps1 he has grown tired of us4 ,but ,my ,man's voice was a little too matter-of-factly gruff--indeed1 he had grown very fond of ,sir ,christopher--and as for the children1 they would accept no such explanation4 ,it was ,curlylocks who found ,sir ,christopher--or did ,sir ,chris find ,curlylocks8 ,anyway1 they came walking through the gate1 my youngest declaiming1 ,kitty--kitty--kitty6 ,my 'ittle kitty6 ,and since that time1 every summer1 ,sir ,christopher takes a vacation4 ,he comes back so sleek and proud and happy that he can hardly contain himself4 ,he rubs against each of us in turn1 purring the most satisfied purr--if we could but fully understand the dialect he speaks6--as if he would impart to us something truly important4 ,i declare1 said ,daddy1 one day1 ,i believe that cat goes up in the hills and hunts4 ,camps out and has a good time1 added daughter4 ,and fishes1 suggested ,ted4 ,cats do catch fish4 ,sometimes4 ,i've read about it4 ,daddy nodded4 ,seems to agree with him1 whatever he does4 ,vacations agree with anybody1 asserted my oldest4 ,and then1 ,i don't see why we can't go along with ,sir ,chris4 ,at least we might go the same time he does4 ,mother1 couldn't we8--it was a question that gathered weight and momentum like a snowball rolling down hill1 for ,i had always insisted that1 with a big family like mine1 ,i could never bother to go camping4 ,i wanted to be where things were handy3 running water from a faucet1 bathtubs and gas and linoleum1 a smoothly cut lawn and a morning postman4 ,go camping with a family like mine8 ,never4 ,but the thought once set going would not down4 ,perhaps1 after all1 ,sir ,christopher was right and ,i was wrong4 ,for people did go camping1 most people1 even groups to the number of nine 7the right count for our family71 and they seemed to enjoy it4 ,they fought with mosquitoes1 and fell into creeks2 they were blotched with poison oak1 black from exposure1 lame from undue exercise1 and looked worse than vagrant gipsies--but they came home happy4 ,even those who spent days in bed to rest up from their rest 7,i have known such7 seemed happy4 ,and every one sighs and says1 ,we had such a good time6 ,we're planning to go back again next summer4 ,so at last ,i gave up--or gave in4 ,we went to the mountains1 following up the trail along ,calapooia ,creek2 we camped and hunted and fished to the hearts' content4 ,we learned to cook hotcakes out-of-doors1 and how to make sourdough biscuit1 and to frizzle bacon before a bonfire1 and to bake ham in a bread pan1 such as our mothers fitted five loaves of bread in2 we learned to love hash1 and like potatoes boiled in their jackets1 and coffee with the cream left out4 ,we went three miles to borrow a match2 we divided salt with the stranger who had forgotten his2 we learned that fish is good on other days than ,friday and that trout crisps beautifully in bacon grease2 we found eleventeen uses for empty lard pails and discovered the difference between an owl and a tree toad4 ,we gained a speaking acquaintance with the ,great ,dipper1 and learned where to look for the north star1 why fires must be put out and what chipmunks do for a living4 ,we learned-- ,last night we came home4 ,now1 mother1 aren't you really glad you went8 quizzed ,daddy4 ,yes-s1 said ,i1 slowly1 ,i'm glad ,i went4 ,it has been a new experience4 ,i feel like ,i'd gained a degree at the ,state ,university4 ,my understanding mate merely chuckled--and went on unpacking the tinware4 ,but ,ted spoke up3 ,gee6 ,bet ,i make good in ,english ,,iii this year4 ,got all sorts of ideas for themes4 ,this trip's been bully4 ,we'll go again1 won't we1 ,mother8 asked my oldest4 ,i think we'll always go again1 answered ,i--some sober thinking ,i was doing1 as ,i folded away the blankets4 ,let me get supper--it was ,laura1 my middle girl1 speaking--surely ,i can cook on gas1 if ,i can over a campfire4 ,and ,laura had never wanted to cook6 ,strange tendencies develop when one lives out in the open a space of time4 ,but ,curlylocks was undisturbed4 ,kitty--kitty--kitty6 ,my 'ittle kitty6 he reiterated4 ,and truly1 so my neighbor told me1 ,sir ,christopher had beat us home by a scant twenty-four hours4 ,he rubbed about us in turns1 happily purring4 ,he's telling us all what a good time he had1 said ,i1 understanding at last1 but he is adding1 ,i think1 that the best part of going away is getting home again4 ,but if we didn't go we couldn't get home again1 said ,somebody4 ,and somebody's cat purred his approval4 ,perhaps1 after all1 he finds us a teachable family4 ,or perhaps he knows that once caught by the lure of the hills1 once having tasted the tang of mountainous ozone1 we will always go back--he has rare intuitions1 has ,sir ,christopher4 ,for1 already1 ,i find myself figuring to fashion a detachable long handle for the frying pan3 ,yes1 next time1 we shall plan to conserve both fingers and face4 ,next time6 ,that is the beauty of vacation days3 ,we think of them when the frost comes1 when the snow drifts deep1 when the arbutus blooms again--and we plan1 plan1 plan6 ,and are very happy--because of memory1 and anticipation4 ,we have opened barred windows1 and widened our life's horizon4 ,does ,sir ,christopher guess8 ,wise old ,sir ,chris6 ,homing-,it in an ,apartment ,by ,ernest ,l4 ,thurston ,there were four of them--all girls employed in great offices4 ,alone1 far away from their home towns and families1 they were all suffering from attacks of too-much-boarding-house4 ,each was longing for a real1 home-y place to live in4 ,and out of that longing was born1 in time1 an idea1 which developed1 after much planning1 figuring and price-getting1 into a concrete plan and a course of action4 ,they were good friends1 of congenial tastes1 and so they decided to home-it together4 ,now this is nothing new1 in itself4 ,it was the thorough way they went about it that was not so common4 ,they applied the rules of their business life1 and studied their proposed path before they set foot in it4 ,they looked over the field1 weighed the problems1 decided what they could do1 and then arranged to put themselves on a sound financial basis from the start4 ,all had occupied separate rooms in sundry boarding houses4 ,each had experience in meals in and meals out4 ,each could analyze fairly accurately her expenses for the preceding six months4 ,after study1 they decided that1 without increasing their combined expense1 they could have comfortable quarters of their own and more than meet all their needs4 ,freedom1 food1 furniture1 fixing and friends1 said ,margaret1 without the boarding house flavor4 ,they longed for a little house and garden of their own4 ,but they were busy people1 and this would mean extra hours of care and labor1 more demands on their strength1 and a longer travel distance--a load they felt they could not carry4 ,so they sought an apartment4 ,the search was long but they found it4 ,it was in a small structure1 on a quiet street1 and several flights up1 without elevator4 ,but1 as ,peggy said1 ,elevators have not been in style in our boarding houses1 and flights of stairs have--so what matters it8 ,the suite1 when you arrived up there1 was airy and comfortable4 ,it provided two bedrooms1 a cheery living room1 a dining room and a kitchenette4 ,clarice remarked1 ,the 'ette' is so small we can save steps by being within hand's reach of everything1 no matter where we stand4 ,the rent was less than the combined rental of their four old rooms4 ,heat and janitor service were provided without charge1 but they were obliged to meet the expense of gas for the range and of electric lights4 ,they might have lived along happily in their new nest without a budget1 and without specific agreements as to expense4 ,but they were business girls4 ,so they sat right down and decided every point1 modifying each1 under trial1 to a workable proposition4 ,then they stuck to it and made it work4 ,there was the matter of furnishing4 ,each partner1 while retaining personal title to her property1 contributed to general use such articles of furniture she possessed as met apartment needs4 ,from one1 for example1 came a comfortable bed1 from another1 chairs and a reading lamp1 from a third a lounge chair1 and from the fourth her piano and couch4 ,of small rugs1 sofa pillows1 pictures and miscellaneous small furnishings there were sufficient to make possible a real selection4 ,then the four determined on further absolute essentials to make the rooms homelike4 ,there were needed comfortable single beds for each1 dressing tables1 bed linen1 dining-room equipment1 kitchen ware1 a chair or two1 and draperies4 ,their decisions were made in committee-of-the-whole1 and nothing was done that could not meet with the willing consent of all4 ,to meet the first cost they each contributed fifty dollars from their small savings1 and assessed themselves a dollar and a quarter per week thereafter4 ,they then bought their equipment1 paying part cash and arranging for the balance on time4 ,and be sure it was fun getting it6 ,then there was the question of meals4 ,it was determined to prepare their breakfasts and dinners and to put up lunches4 ,to allow a certain freedom1 it was agreed that each should pack her own lunch1 and that regular meals should be cooked and served1 turn and turn about1 each partner acting for a week4 ,a second member washed the dishes and took general care of the apartment4 ,thus a girl's general program reduced to1 ,first week ,cooking ,second week ,free ,third week ,dishes1 etc4 ,fourth week ,free ,fifth week ,cooking ,etc4 ,during an experimental period1 the cost of provisions and ice was summed up weekly and paid by equal assessment4 ,later a fixed assessment of seven dollars1 each1 was agreed to1 and proved sufficient4 ,there were even slight surpluses to go into the mannikin jar on the living room mantel1 which ,clarice called the ,do ,drop ,inn1 because it provided from its contents refreshment for those who dropped in of an evening4 ,naturally there was a friendly rivalry1 not only in making the most of the allotment1 but in providing attractive meals and dainty special dishes4 ,clarice's stuffed tomatoes won deserved fame1 and ,margaret made a reputation on cheese souffle4 ,peggy1 too1 was a wizard with the chafing dish4 ,consideration was given the matter of special guests1 either for meals1 or for over-night4 ,the couch in the living room provided emergency sleeping quarters4 ,as for meals1 separate fixed rates were set for breakfasts and for dinners4 ,this was paid into the regular weekly provision fund by the girl who brought the guest1 or by all four equally1 if she were a general guest4 ,the girl who brought a guest also pitched in and helped with the work4 ,whenever the group went out for a meal1 as they did now and then for a change1 or for amusement1 or recreation1 each girl paid her own share at once4 ,finally1 there was the factor of laundry4 ,after a little experimenting1 household linen was worked out on an average basis1 so that a regular amount could be assessed each week4 ,of course each girl met the expense of her own private laundry4 ,as a result of this planning1 each member of the household found herself obligated to meet a weekly assessment containing the following items3 ,rent1 furniture tax1 household laundry1 extras 7#a4jj7 and personal laundry4 ,of these1 the only item not positively fixed1 as to amount1 was the last4 ,each girl1 naturally1 paid all her strictly private expense1 including clothes1 and medical and dental service4 ,one of the number was chosen treasurer for a three-months' term1 and was then1 in turn1 succeeded by another1 so that each of the four served once a year4 ,the treasurer received all assessments1 gave the weekly allotment to the housewife1 and paid other bills4 ,minor deficiencies were met from surplus4 ,moreover1 she kept accurate accounts4 ,once settled comfortably in their quarters1 with boarding-house memories receding into the background1 it took but little time for a happy1 home-y atmosphere to develop4 ,of course1 with closer intimacy1 there were temperamental adjustments1 as always1 but they came easily4 ,the household machinery ran smoothly1 almost from the first1 because there was a machine1 properly set up1 operated and adjusted--rather than an uncertain makeshift4 ,to ,express ,personality ,by ,dana ,girrioer ',keep house8' ,i should say not6 answered ,anne1 who had journeyed out into the suburbs to tell her engagement to ,burt ,winchester to the home folks before she announced it4 ,i'm going to retire to the ,kensington1 or some nice apartment hotel1 at the ripe old age of twenty-four4 ,what'd you think1 we're back in the dark ages1 ,b4 ,f48 ',b4 ,f4'8 repeated ,aunt ,milly4 ,before ,ford1 said ,anne1 besides1 everybody kept house when you were married6 ,and now nobody does1 except a few ,ancient ,mariners8 inquired ,cousin ,dan4 ,anne blushed4 ,of course it suits some people1 now1 she amended1 hastily4 ,perhaps it's all right to keep house1 if you have a big family1 or lots of money and can hire all the fussing done4 ,you don't need to hire fussing1 if you've a big family1 said ,aunt ,milly1 her eyes twinkling behind the gold-bowed spectacles4 ,you'll keep on with the drawing--illustrating8 ,surely1 answered ,anne4 ,burt will keep right on being a lawyer4 ,i see1 said ,george4 ,well1 ,queen ,anne1 ,i suppose when we want to visit you we can hire a room in the same block1 ,i mean1 hotel4 ,i thought1 perhaps1 having so far conformed to the habits of us ,philistines as to take a husband1 you might go the whole figure and take a house6 ,please6 begged ,anne4 ,in that tone1 it was a catchword dating back to nursery days which the elf-like ,anne had shared with a whole brood of sturdy cousins1 and meant1 ,please stop fooling2 ,i want to be taken seriously4 ,i love to draw--but my people don't look alive1 somehow1 said little ,milly1 wistfully4 ,cried ,anne3 ,keep trying1 ,milly2 there is nothing so lovely as to have even a taste for some sort of creative work1 and to develop it2 to express your own personality in something tangible1 and to be encouraged to do so4 ,do myself when either ,burt or ,i could pay our proportionate share of a hotel dish-washer1 or butler1 or whatever is needed8 ,at the studio it was much easier4 ,some time in the early fall1 ,anne told her callers1 who arrived by two's1 three's and four's1 as the news began to circulate among her friends4 ,no1 ,i won't keep this1 with a jerk of her thumb towards the big1 bare room which had been hers since she left ,aunt ,milly and the little home town4 ,there's a room at the top of the ,kensington ,i can have1 with a light as good as this1 and that settles the last problem4 ,i'd hate to have to go outdoors for meals1 when ,i'm working4 ,nan ,gilbert6 exclaimed her dearest friend4 ,you have the best luck6 ,you can do good work1 and get good pay for it1 and be happy all by yourself2 and now you're going to be happier1 with a husband who'll let you live your own life2 you'll be absolutely free1 not even a percolator to bother with1 nothing to take your mind from your own creative work1 free to express your own personality6 ,mercy1 said ,anne1 closing the door upon this last caller4 ,if ,i don't set the ,north ,river1 at least1 on fire1 pretty soon1 they'll all call me a slacker4 ,she hung her card1 ,engaged1 upon the door leading into the hall 7some one had scrawled ,best ,wishes underneath the printed word71 and proceeded to get her dinner in a thoughtful frame of mind4 ,the tiny kitchenette boasted ice-box1 fireless1 and a modest collection of electric cooking appliances2 in a half-hour ,anne had evolved a cream soup1 a bit of steak1 nearly cubical in proportions1 slice of graham bread1 a salad of lettuce and tomato with skilfully tossed dressing1 a muffin split ready to toast1 with the jam and spreader for it1 and coffee was dripping into the very latest model of coffee-pots4 ,anne had never neglected her country appetite1 and was a living refutation of the idea that neatness and art may not dwell together4 ,she moved quietly and with a speed which had nothing of haste2 her mind was busy with a magazine cover for ,december1 she believed she'd begin studying camels4 ,after dinner came ,burt ,winchester1 a steady-voiced1 olive-skinned young man1 in pleasant contrast to ,anne's vivacious fairness1 and together they journeyed uptown and then west to the ,kensington1 for a final decision upon the one vacant apartment4 ,the rooms were of fair size1 they were all light1 and the agent had at least half a yard of applicants upon a printed slip in his pocket4 ,burt studied the apartment not at all1 but his fiancee with quiet amusement4 ,he was much in love with ,anne1 but he understood her better than she had yet discovered4 ,i don't think we'll ever find anything better1 she was saying to him4 ,perhaps he'd have it redecorated for us1 with a long lease-- ,the agent coughed discreetly4 ,the leases are for one year1 with privilege of renewal1 he said to ,burt4 ,it has just been redecorated2 is there anything needed8 ,it would all be lovely1 if one liked blue1 murmured ,anne4 ,just the thing for some girl1 but not for me1 all that pale blue and silver1 it doesn't look a bit like either of us1 ,burt4 ,i had worked out the most stunning scheme1 cream and black1 with a touch of ,kelly green-- ,another cough1 somewhat louder1 and accompanied by an undisguised look of sympathy for ,burt4 ,the owner prefers to decide the decorations1 ,madame1 said the agent4 ,tastes differ so1 you understand4 ,please hold the suite for me until tomorrow night1 said ,burt1 decisively4 ,i suppose we'll take it2 if not1 ,i'll make it right with you4 ,i should say1 'tastes differ1' laughed ,anne1 tucking her arm into ,burt's1 as they began the long walk down-town4 ,do you know1 ,aunt ,milly and the girls thought1 of course1 we'd keep house1 and ,dan and ,george are going to pick out girls that will keep house1 ,i saw it in their eyes4 ,you--you're going to be satisfied1 ,burt8 ,i think so1 answered ,burt1 judiciously1 and then with a change of tone1 ,nan1 you precious goose1 you've always told me you were not domestic4 ,and you've always said you were no more domestic than ,i was1 finished ,anne1 happily4 ,she entirely missed the quizzical expression of the brown eyes above her4 ,nuff said4--,are we going to ,branton tomorrow1 ,burt1 with the crowd8 ,can you take the day8 ,anne's crowd1 the half-dozen good friends among the many acquaintances she had formed in the city1 were invited for a day in the country4 ,she and ,burt now talked it over1 agreeing to meet in time to take the nine-thirty train1 with the others4 ,but at nine1 next morning1 ,burt had not appeared at the studio2 instead1 ,miss ,gilbert had a telephone message that ,mr4 ,winchester was delayed1 but would call as soon as possible4 ,it was unlike ,burt1 but ,anne1 sensibly1 supposed that business had intervened1 and1 removing her hat1 was glad to remember that she had not definitely accepted the invitation when it was given4 ,the crowd were sure enough of each other and of themselves to appear casual3 ,burt and she could take a later train1 and have just as warm a welcome4 ,at nine-thirty ,burt appeared1 explaining briefly1 ,best ,i could do4 ,there's a train in twenty minutes1 we'll catch it if we hurry4 ,anne hurried1 which proved to be unnecessary1 as the train seemed late in starting2 during the trip there was little conversation1 as ,anne was tactful1 and ,burt preoccupied4 ,branton6 called the conductor1 at least it sounded like ,branton1 ,burt came out of his revery with a start1 and ,anne followed him down the aisle4 ,they stood a moment upon the platform of the quiet little station and watched the train pull out2 as they turned back into what seemed the principal street1 ,anne craned her neck to look around an inconvenient truck piled with baggage1 and made out the sign1 ,byrnton4 ,oh1 ,burt1 what were we thinking of8 she exclaimed4 ,this isn't the right place at all6 ,we were to take the road up past a brick church--and there isn't any here--this is ,byrnton1 and we wanted ,branton4 ,what shall we do--why don't you say something8 ,fudge6 said ,burt1 soberly1 but in his eyes the dancing light he reserved for ,anne4 ,i'll ask the ticket-agent4 ,he came out of the station1 smiling4 ,this isn't the ,branton line at all1 but a short branch west of it1 he informed her4 ,we took the wrong train1 but he says lots of people make the same mistake1 and they are going to change one name or the other1 eventually4 ,i am to blame1 ,nan1 for ,i know this place1 ,byrnton2 ,i have1 or used to have1 an ,aunt ,susan here1 somewhere--shall we look her up8 ,we have nearly three hours to kill4 ,it will be afternoon before we can get to ,branton--and ,aunt ,susan will give us nourishment1 at least1 if she's home4 ,very well1 ,anne assented4 ,if ,burt's business absorbed him like this1 she must learn to take it philosophically4 ,what a pretty place1 ,burt6 ,do see those wonderful elms6 ,byrnton proved to be an old-fashioned village1 which had had the good fortune to be remodelled without being modernized4 ,along the main street many of the houses were square1 prim little boxes1 with front yards bright with sweet williams1 marigolds1 and candytuft2 these had an iron fence around the garden1 and1 invariably1 shutters at the front door4 ,an occasional house stood flush with the brick or flagged sidewalk2 in that case there were snowy curtains at the window1 and a glimpse of hollyhocks at the back4 ,the newer houses could be distinguished by the wide1 open spaces around them2 the late comers had not planned their homes to command the village street1 and neighbors1 as an older generation had done1 but these twentieth century models did not begin until one had left the little railway station well behind4 ,what a homely1 homey place1 said ,anne1 noting everything with the eye of an artist4 ,i don't see how you could forget it1 if you have an aunt living here4 ,that's the question1 answered ,burt4 ,have ,i an aunt living here8 ,she may be in ,california2 however1 in that case1 the key will be under the mat4 ,anne continued to look about her1 with sparkling eyes4 ,if ,aunt ,milly had lived in a place like this1 ,i'd be there yet1 she told him4 ,the factories spoiled the place for me1 but they made business good for ,uncle ,andy and the boys1 and ,aunt ,milly likes the bustle1 she'd think this was too quiet4--,isn't it queer how people manage to get what they want--in time8 ,it is1 indeed1 smiled ,burt4 ,there1 ,nan1 that low white cottage at the very end1 the last before you come to open fields4 ,that's ,aunt ,susan's4 ,they quickened their pace2 ,anne was conscious of an intense wish that ,aunt ,susan might be home4 ,she wanted to see the inside of the white house1 bungalow1 it might almost be called1 if one did not associate bungalows with stucco or stained shingles4 ,this cottage was of white wood1 with the regulation green blinds4 ,there was an outside chimney of red bricks2 a pathway of red bricks in the old herringbone pattern led up to the front door1 with its shining brass knocker4 ,a row of white foxgloves stood sentinel before the front of the house1 on each side the entrance1 their pointed spires coming well above the window-sills2 before them the dark foliage of perennial lupins1 tossing up a white spray of flowers1 and then it seemed as if every old-fashioned flower of white1 or with a white variety1 ran riot down to a border of sweet alyssum4 ,above all the fragrance came the unmistakable sweetness of mignonette4 ,oh1 ,burt6 called ,anne1 ,i do hope she's home4 ,what a woman she must be1 ,i can guess some things about her1 just from the outside of her house4 ,i hope she'll show me the inside of it4 ,burt shook his head4 ,she'd have seen us before this and been out here1 he suggested4 ,come 'round to the back4 ,the back of the premises proved no less fascinating2 there was the neatest of clothes-yards1 a vegetable garden1 and a small garage1 after which ,anne regarded the silent cottage with wistful eyes4 ,those beautiful1 old-fashioned flowers1 no petunias but the white frilled kind1--she's an artist--and has the wash done at home1 she enumerated1 and runs her automobile herself1 ,i am sure1 for she's a practical person as well2 if she were just a sentimental flower-lover1 she'd have had something or other climbing up the house1 and it spoils the woodwork4 ,it's safe to say ,aunt ,susan's in ,california1 said ,burt1 disregarding this4 ,no joke1 ,nan1 she has a married daughter who has been trying to get her out there for years1 and ,aunt ,susan's always threatening to go4 ,never thought she would1 but we can soon find out2 ,i know who'll have the key4 ,he left ,anne and walked back to the house just passed1 and presently reappeared with the key4 ,here you are4 ,aunt ,susan left it with ,mrs4 ,brown1 who is to look after the place1 and to use her judgment about letting people in4 ,aunt ,susan has only been gone two days1 she went hurriedly at the last1 and ,mrs4 ,brown is to close the house for her1 but she hasn't got 'round to it yet4 ,lucky for us1 there'll be everything we need for lunch2 ,i brought eggs--see8 ,laughing like a boy4 ,burt unlocked the back door1 and then produced four eggs1 from as many pockets4 ,he laid them carefully down upon the kitchen table4 ,now1 ,nan1 we can use anything in the kitchen or pantry1 and ,mrs4 ,brown has a blueberry pie in the oven which she'll give us1 she'll bring it over when it's done4--,want to go over the house8--,give you my word it's all right1 in fact ,aunt ,susan told ,mrs4 ,brown she wished she could rent it1 as is1 if she only knew somebody who would love it--that was her word4 ,you can love it until the afternoon train1 can't you8 ,if ,anne heard1 she made no reply1 she was exploring4 ,downstairs1 a wide hall occupied a central third of the house2 it was well lighted by the windows each side the front door1 and by double doors of glass1 which opened on to the back porch4 ,on one side the hall were kitchen and pantry1 nearly equal in size1 and glistening with white paint1 aluminum1 and blue and white porcelain4 ,with a hasty glance over these treasures1 to which she was coming back1 ,anne stepped out into the hall again1 and around to the front of the winding staircase1 and entered what she knew at once for the owner's bedroom4 ,there were windows on two sides1 as this was a front room1 and each broad sill bore its own pot of ferns4 ,the furniture here was all old-fashioned1 of some dark wood that had been rubbed to a satin finish1 the floor was of plain surface1 with braided mats1 and a blue and white counterpane provided the only bit of drapery in the room4 ,anne's bright head nodded with satisfaction4 ,here was character2 to win ,aunt ,susan's respect would be no light task1 her personal and intimate belongings showed an austere sense of values and an almost surgical cleanliness4 ,yet ,aunt ,susan could not be a martinet2 her hall1 furnished for other people1 showed due regard for their comfort2 the living room1 which took the entire western side of the cottage1 bore unmistakable signs of much occupancy1 with wide and varied interests4 ,a set of dark shelves1 at the lower end1 held china1 and suggested that one might also eat at the refectory table1 which was furnished as a desk and held a few books1 many writing materials1 and a foreign-looking lamp4 ,there was also a piano1 well littered with music1 a sewing bag thrown down upon a cretonned window seat1 and the generous fireplace was flanked by two huge baskets1 one heaped with magazines1 the other a perfectly round mound of yellow fur1 which suddenly took form and life as a yellow tabby cat fastened hopeful topaz eyes upon them1 blinked away a brief disappointment1 and then yawned with ennui4 ,his missie left him all alone1 said ,anne1 bending to stroke the smooth head4 ,what's upstairs1 ,burt8 ,go and look1 ,i'll take your place with the ,admiral until you come back1 offered ,burt1 and at sound of his name the yellow cat jumped out and began rubbing against a convenient table leg4 ,anne found them in the same relative positions when she returned from her inspection of the upper floor4 ,your ,aunt ,susan must use it for sewing1 she told ,burt1 dreamily4 ,with that big skylight--it could be a studio1 couldn't it8 ,it is1 ,burt informed her4 ,aunt ,susan is an artist--with her needle4 ,she gives1 or gave1 dressmaking lessons1 in her idle moments4 ,she gave up dressmaking1 when she bought this house and settled here1 but now she teaches the daughters of her old customers1 they come out in automobiles every ,wednesday1 in winter4 ,saturday afternoons she has some of the young girls in the village1 here1--without price--and without taste1 too1 some of them6 ,and ,nan1 ,i hate to mention it1 but--,aunt ,susan is a pretty good cook1 too6 ,feed the brute6 quoted ,nan1 with a gay laugh4 ,will the ,admiral drink condensed milk8 ,mrs4 ,brown came over with her blueberry pie as ,burt was summoned to luncheon4 ,she surveyed the table1 which ,nan had laid in the kitchen1 and then the ,admiral1 who was making his toilette in a thorough manner that suggested several courses1 with outspoken approval4 ,my1 ,i wish ,susan ,winchester could pop in this minute4 ,you found the prepared flour1 and all--baked 'em on the griddle6 ,wa'n't that cute6 ,i never did see an omelet like that except from ,susan ,winchester's own hands1 and she learned from a ,frenchwoman she used to sew with4 ,some folks can pick up every useful trick they see4 ,turning to ,burt1 she continued3 ,with all the new fangle-dangles of these days1 women voting and all1 you're a lucky boy to have found an old-fashioned girl6 ,i know it1 said ,burt1 brazenly1 but he did not meet ,anne's astonished eyes4 ,my girl has learned the best of the new accomplishments1 without losing what was worth keeping of the old4 ,anne's judgment told her it was a good luncheon--no better than she served herself at home1 though4 ,she stared at her own slim1 capable fingers4 ,was she domestic1 after all8 ,we've been looking at apartments in the city1 ,burt went on--apartments in a hotel1 you know4--,try the omelet1 ,mrs4 ,brown--,nan's don't fall flat as soon as other omelets do4--,but we haven't found what really appeals to us4 ,i should think not1 declared ,mrs4 ,brown1 vigorously4 ,i always say a person hasn't a spark of originality that will go and live in a coop just like hundreds of others1 all cut to the same pattern4 ,look at your ,aunt ,susan1 now4 ,this house belonged to old ,joe ,potter1 he built it less'n ten years ago an ,mis' ,potter she had it the way she wanted it1 and that was like the house she lived in when she was a girl1 little1 tucked-up rooms1 air-tight stoves1 a tidy on every chair1 and she made portieres out of paper beads that tickled 'em both silly--yes1 and tickled everybody in the ear that went through 'em1 though that wan't what ,i meant to say4 ,when she died1 ,joe wouldn't live here1 said he wouldn't be so homesick for ,julia in another house1 this one was full of her4 ,so1 your ,aunt ,susan bought it1 and what did she do8 ,she knocked out partitions1 took down fire-boards1 threw out a good parlor set and lugged in tables and chairs from all over1 put big panes of glass where there was little ones--in some places1 she did1 and only the good angels and ,susan ,winchester knows why she didn't change 'em all1 they're terrible mean to wash--made the front hall into a setting room and the parlor into a bedroom1 got two bathrooms and no dining room--well1 to make a long story short1 this house is now ,susan ,winchester4 ,anybody that knows ,susan would know it was her house if they see it in ,china4 ,did you learn to keep house with your mother8 ,the transition was so abrupt that ,anne started4 ,i--my aunt brought me up--and nine cousins1 she answered4 ,my aunt is as unlike ,burt's as you can imagine1 but just as dear and good4 ,she had a big family1 and there was never time enough to have her home as she wanted it--so she thought--and ,i thought so1 too--but yet--,aunt ,milly's home was always full of happy children1 and1 perhaps1 that's what she really wanted1 more than dainty furnishings or a spotless kitchen4 ,folks1 mostly1 get what they want1 even if they don't know it1 confirmed ,mrs4 ,brown4 ,look at the ,admiral1 here4 ,he don't want to come over and live with me1 same as ,susan meant he should4 ,he wants to stay right in his own home1 and have his meals and petting same as usual1 and here you come along today and give them to him4 ,trouble is1 folks don't always know what it is they want4 ,when ,mrs4 ,brown went back to her own dinner1 she left ,anne with something to think about4 ,washing the dishes in ,aunt ,susan's white sink1 which was fitted to that very purpose1 drying them upon a rack which held every dish apart from its neighbors1 and1 finally1 polishing the quaintly shaped pieces upon ,aunt ,susan's checked towel1 which remained dry and spotless2 opening every drawer and cupboard to see that all was left in the dainty order she had found there1 ,anne had a clear vision of the blue and silver furnishings at the ,kensington4 ,what had she told ,burt3 ,it doesn't look like either of us8--while ,aunt ,susan's home-- ,burt1 she called1 come and answer this question4 ,did you come to ,byrnton instead of ,branton on purpose8 ,what's this8 said ,burt4 ,cross-examination8 ,it's an examination1 surely1 but ,i won't be cross1 replied ,anne1 with a rare dimple4 ,you must answer my question truly4 ,yes1 ,your ,honor1 said ,burt4 ,i did1 ,your ,honor4 ,did you know your ,aunt ,susan wouldn't be home8 ,our ,aunt ,susan1 corrected ,burt4--,no1 ,your ,honor--that is1 ,i thought-- ,you knew she was going to ,california8 ,yes1 ,your ,honor4 ,this summer8 ,i didn't know exactly when--honestly1 ,nan1 ,i did want you to meet her4 ,why8' ,i knew you'd like the way she keeps house4 ,i didn't realize that the house could speak for itself1 without her4--,you do like it1 ,nan8 ,i don't have to ,not unless ,your ,honor pleases4 ,case dismissed1 for lack of evidence1 said ,nan4--,burt1 could we live here8 ,we could4 ,i'll admit it's what ,i'd like1 if you do4 ,the difference in rents would buy gasoline4 ,could you work here1 and keep house1 too8 ,i can if ,i'm smart1 answered ,nan1 soberly4 ,i wonder if ,i'm smart4 ,dear1 said ,burt4 ,what have you done since you came to ,new ,york but work and keep house1 too1 in less convenient quarters than this1 and with no one to help you--no good husband like me--8 ,that's so6 she turned a radiant face upon him4 ,if we like1 we can begin household included a colored cook1 who1 according to local custom1 went to her own home every night4 ,invariably before leaving she came to me with the short and abrupt question1 ,what's for8 ,this experience taught me the difficulty of planning breakfasts off hand4 ,more than one beginner in housekeeping wonders whether a light breakfast of little but a roll and coffee is more healthful than one of several courses4 ,it is an old ,american idea that luncheon or supper may be light1 dinner varied and heavier1 but breakfast must be wholesome and nourishing4 ,this is based on the belief that it is natural for man and beast to wake up in the morning with a desire for food and unnatural to try to do the hardest work of the day with but a pretence at eating4 ,about twenty years ago there was much talk of the alleged healthfulness of going without breakfast entirely4 ,for a time this plan was the object of much discussion and experiment by medical and scientific men and workers in general4 ,the late ,edward ,everett ,hale was a strong opponent to abstinence from breakfast by brain workers1 while those who labored with hand and muscle looked with little favor on the morning fast4 ,finally the no-breakfast idea went the way of most fads in food4 ,as a compromise between the extremes of going without any breakfast1 and the old-time1 over-hearty meal of several courses1 there came into fashion the simple meal of fruit1 cereal and eggs4 ,this is to be commended1 if the egg1 or its substitute in food value1 is not omitted4 ,too often a sloppy cereal is washed down rapidly with a cup of coffee and called sufficient4 ,sometimes the ready-to-eat cereal and the milk bottle left at the kitchen door include the entire preparation for the morning meal4 ,the adaptability of this quick breakfast1 and its ease of preparation1 keep it in favor1 but filling the stomach with a cereal1 from which some of its best elements have been taken1 means1 for women folks at home1 placing the coffee pot on the range to warm up the cup that will stop that gone feeling so common after a near-breakfast4 ,the man at work might once have found solace in a glass of beer2 now1 perhaps1 he smokes an extra cigarette4 ,it is well understood that children grow listless and dull before noon1 when an insufficient breakfast is eaten4 ,one who has breakfast leisurely at nine o'clock may be satisfied with a roll and a cup of hot drink1 but a commuter with a trip ahead to office or shop1 and the farmer who must make an early start in the day1 cannot rely on light1 quickly digested food in the morning4 ,their energy and working capacity will slow down long before noon4 ,objection is sometimes made to a good1 sustaining breakfast because of a distaste for food in the morning4 ,in such a case1 look to the quality or quantity of the night meal2 it may be too heavy or indigestible4 ,between a breakfast with warmed-over meats1 and one without meat1 especially if eggs are substituted1 the choice should be given to the latter4 ,twice-cooked meats1 however pleasing they may be to the palate1 are not easy to digest4 ,they serve merely as a way to use left-overs1 which good management will keep to the minimum4 ,when selecting fruits for breakfast1 the fact must not be overlooked that the starch of cereals and acid fruits1 like a sour orange1 often disagree4 ,when apples are plentiful nothing is better than this fruit when baked1 but in cities the banana frequently costs less and it stands at the head of all fruits in food value4 ,when perfectly ripe it has about #ab per cent of sugar1 but as it is picked green1 the fruit sold in the markets is often but partially ripe and is more easily assimilated1 if baked like the apple2 it then becomes a valuable breakfast food4 ,it is a common mistake in a meatless breakfast to use too large a proportion of cereal4 ,while the standard cereal foods1 when dry1 are from two-thirds to three-quarters starch1 with the balance made up of a little protein1 fat1 water1 fibre and a trace of mineral matter1 it should not be forgotten that while cooking they absorb several times their bulk of water1 which reduces the food value of the product4 ,oatmeal and corn meal are best adapted for winter use because they contain a little more fat than wheat or rice1 which are suitable for summer diet4 ,eggs are the most available substitute for meat at breakfast and it is doubtful economy to omit them1 except in times of extreme high prices4 ,they are not essential in all desserts and saving in their use should begin at that point4 ,eggs may be cooked in many ways so that they need never become a monotonous fare4 ,all kinds of fish are an excellent substitute for meat1 and1 as prepared for the table1 nearly equal beef and mutton1 in the amount of protein1 which is the element missed in a non-meat diet1 unless it be carefully planned4 ,breakfasts without ,meat ,the following are adapted to different seasons and ,heppe ,fowls should be divided into four classes1 according to their uses4 ,the uses are controlled by the age of the fowl4 ,what is suitable for one dish is not suitable for others4 ,in fowls the age of the bird controls the use to which it can be put4 ,this is something the caterer and the housewife must remember4 ,a young bird can be distinguished from an old one by the pliability of the tip of the breastbone4 ,when this tip bends under pressure1 then the bird is young4 ,if it is hard and unyielding1 then it is old4 ,very old birds are used for soup and for fricassee4 ,medium-aged birds are used for roasts4 ,spring chickens are used for broilers and for sauteed dishes4 ,very young chicks are used for frying in deep fat2 for this purpose they are dipped in a thin batter1 or else in flour1 and in eggs mixed with milk and afterward in breadcrumbs4 ,these chicks1 and also spring chickens1 are used for casserole dishes and for cocottes 7covered earthen ware containers1 in which the fowls are roasted in the oven74 ,the liver of fowls is used in different ways2 it makes an excellent dish4 ,it is best when sauteed with black butter4 ,some of the fine ,french ragouts consist mostly of chicken livers4 ,with omelettes they make an incomparable garnish4 ,in very high-class establishments the wings and breast are often separated from the carcass of the fowl and served in manifold ways4 ,sometimes the entire fowl is freed of bones1 without destroying the appearance of the bird4 ,these latter dishes are best adapted for casserole service and for cold jellied offerings4 ,capons are castrated male fowls4 ,they fatten readily and their flesh remains juicy and tender1 owing to the indolence of the birds4 ,the meat of animals is tenderest when the animal is kept inactive4 ,for this reason stall-feeding is often resorted to4 ,when the animal has no opportunity to exercise its muscles the latter degenerate1 and nourishment1 instead of being converted into energy1 is turned into fat4 ,range birds and animals are naturally tough2 this is especially true of the muscles4 ,large supply houses now regularly basket their fowls for about two weeks before putting them on the market4 ,during this time they are fed on grain soaked in milk4 ,this produces a white1 juicy flesh4 ,when a bird is to be roasted it should be trussed4 ,this is done by forcing the legs back against the body 7after placing the bird on its back72 a string is then tied across the bird's body1 holding the legs down4 ,the wings are best set firmly against the breast by sticking a wooden skewer through the joint and into the bony part of the carcass1 where the skewer will hold against the bones4 ,in preparing birds for the oven their breasts should be protected by slices of bacon4 ,otherwise they will shrivel and dry before the birds are cooked4 ,for broiling1 the birds are cut through in the back1 in such a manner that they quasi-hinge in the breast2 they are then flattened so they will lie evenly in a double broiling iron2 for this purpose the heavy backbone is removed4 ,stuffed ,poularde ,after trussing the bird rub it with lemon so it will keep of good color2 now cover the breast with thin slices of bacon 7these can be tied on74 ,the poularde is put into a deep1 thick saucepan and cooked with butter and aromatics in the oven4 ,when it is nearly done it is moistened with poultry stock4 ,if this stock reduces too fast1 then it must be renewed4 ,it is finally added to the sauce4 ,these fowls may be stuffed with a pilaff of rice4 ,this is prepared as follows3 ,half an onion is chopped and fried in two ounces of butter4 ,before it acquires color half a pound of ,carolina rice is added4 ,this is stirred over the fire until the rice has partly taken up the butter2 then it is moistened with consomme 7one quart72 and covered and cooked in a moderate oven for fifteen minutes4 ,it is now combined with a little cream1 a quarter a pound of dice of goose liver and some dice of truffles4 ,the rice should not be entirely cooked by the time it is stuffed into the bird2 the cooking is completed inside the bird4 ,the cream is added to provide moisture for the rice to take up4 ,instead of cream one may use consomme1 and the truffles and fat liver may be left out1 if too expensive4 ,the bird is served with a suitable sauce4 ,the best sauce for this purpose is ,sauce ,supreme1 and is prepared as follows3 ,put two pints of clear poultry stock and some mushroom-liquor into a saute-pan4 ,reduce two-thirds4 ,while this is going on prepare some poultry veloute by bringing some butter in a pan to bubble1 and adding some flour4 ,this is brought to a boil while stirring constantly4 ,the flour must not be allowed to color4 ,now1 gradually1 add some poultry-stock1 stirring all the while with a whisk4 ,salt1 pepper and nutmeg are added4 ,this is simmered on the side of the fire1 and then strained4 ,now add one pint of this veloute to the supreme sauce2 reduce the whole on an open fire1 while constantly stirring4 ,gradually add half a pint of good cream and finish with a little butter4 ,sauteed ,chicken ,young chickens should be used for this purpose4 ,feel the breast bone2 if it bends beneath pressure the bird is right4 ,empty1 singe and clean1 and disjoint the bird4 ,this is done by cutting the skin at the joints and loosening the bones with a knife4 ,the wings are cut off in such manner that each holds half of the breast2 the pinions are entirely cut off2 the different pieces are seasoned with salt and pepper2 now heat some clarified butter in a saute-pan2 when it is very hot insert the pieces of chicken and let them color quickly2 turn them over1 from time to time1 so as to get a uniform color2 cover the utensil and put it in a fairly hot oven4 ,the legs are cooked for about ten minutes more than the breast and wings4 ,the latter are kept hot separately4 ,when all pieces are done1 they are dished on a platter and kept hot in the oven2 the pan is now moistened with mushroom-liquor1 or chicken stock1 and again put on the fire2 only a very little moistening is put in the pan4 ,as soon as it boils swing it around the pan and then add to it1 gradually1 the sauce that is to be served4 ,this swinging in the pan dissolves the flavor1 which solidifies in the bottom of the pan2 it greatly improves the sauce4 ,a simple sauce for sauteed chicken is nut butter1 that is1 butter browned in the pan4 ,this may be varied by flavoring it with a crushed garlic-clove4 ,an addition of fine herbs will further improve it4 ,a dark tomato sauce may also be served4 ,a good garnish for sauteed chicken is large dice of boletus mushrooms1 sauteed in garlic butter2 also dice of raw potatoes sauteed in clarified butter1 and again fresh tomatoes cut up and sauteed in butter4 ,egg-plants are also excellent for a garnish4 ,sauteed chicken may be baked and served in the cocotte4 ,poulet en ,casserole ,bourgeoise ,the chicken is trussed2 the breast is covered with strips of bacon and put into a deep1 thick saucepan4 ,it is colored in the oven1 and when nearly done is transferred to a casserole4 ,it is now moistened with some chicken-stock and a little white wine4 ,this moistening is used in the basting1 and after being freed of fat1 added to the sauce4 ,a few minutes before the fowl is done bouquets of fresh vegetables are added to the chicken1 in individual heaps1 and the chicken is then served1 either with a sauce1 or else with an addition of butter4 ,it should be carved in sight of the guests4 ,chicken ,pie ,a fowl is cooked 7boiled7 with flavoring vegetables until done1 and is then cut up as for fricassee2 the pieces are seasoned with salt and pepper and sprinkled with chopped onions1 a few mushroom-buttons and some chopped parsley4 ,the pieces are now put into a pie-dish1 legs undermost1 some thinly-sliced bacon is added and some potatoes ,parisienne 7spooned with the special potato spoon74 ,the pie-dish is now filled two-thirds with chicken veloute 7chicken-stock thickened with flour and egg-yolks71 and a pie crust is laid over all1 pressed to the edges of the dish and trimmed off4 ,the crust is slit open 7so the steam can escape71 it should be painted with egg-yolk1 and be baked for one and a half hours in a moderate oven4 ,supreme de ,volaille ,jeanette ,of a poached cold fowl the supremes 7boneless wing and breast in one piece7 are loosened and trimmed to oval shape4 ,they are covered with white chaudfroid sauce1 by putting the pieces on a wire tray and pouring the sauce over while still liquid4 ,they are decorated with tarragon leaves4 ,in a square1 flat pan a half-inch layer of aspic is laid4 ,on this slices of goose liver are superimposed 7after having been trimmed to the shape of the supremes72 the supremes are now put on top of the fat liver1 and then covered with half-melted chicken jelly4 ,when thoroughly cooled and ready to serve1 a square piece is cut out of the now solid jelly around the supremes4 ,the supreme is thus served incrusted in a square block of thick jelly2 the dish is decorated with greens4 ,polly's ,thanksgiving ,party ,by ,ella ,shannon ,bowles ,the idea for the party came to ,polly one night as she was washing the dinner dishes1 and that very evening she waved away the boys' objection that ,thanksgiving was a family affair pure and simple4 ,i'm not planning to have any one in for dinner1 she said1 though there's nothing that would suit me better1 if the apartment boasted a larger dining room4 ,but there are three girls in my ,sunday ,school class that can't possibly go home this year1 and ,i've no doubt you boys could find somebody that won't be invited anywhere4 ,thanksgiving is such a cheerless place in a boarding house6 ,if we ask a few young people in for a party in the evening1 it will liven things up a bit for them1 and ,i think it will be pretty good fun for us1 don't you8 ,in the end ,polly had her way1 and just a week before ,thanksgiving1 she sent invitations to three girls and to two boys whom ,rupert and ,harry suggested4 ,polly searched the shops for a card of two-eyed white buttons of the size of ten cent pieces4 ,she carefully sewed a button on the upper part of a correspondence card1 added eyebrows1 nose and mouth with ,india ink1 copied a body and cap from ,palmer ,cox's ,brownie ,book1 painted the drawing brown1 and behold1 a saucy brownie grinned at her from the invitation4 ,underneath the picture1 she carefully printed a jingle4 ,this ,thanksgiving ,brownie brings a message so gay1 ,to visit our house on ,thanksgiving ,day1 ,to help celebrate with all kinds of good cheer ,the 'feast of the harvest' at the end of the year4 ,the boys took a walk into the country on ,thanksgiving morning and came laden with sprays of high-bush cranberries4 ,these1 with the bunches of chrysanthemums which they bought1 and ,polly's fern and palm1 gave the small living room a festive appearance4 ,assisted by her brothers1 ,polly served the dinner early4 ,after clearing the dining room table1 she placed a pumpkin jack-o-lantern in the center1 and arranged around it piles of apples1 grapes1 and oranges4 ,after the guests had been introduced to each other1 ,polly passed each one a paper plate containing a picture1 cut and jumbled into small pieces1 and a tiny paper of paste and a toothpick4 ,each girl and boy was asked to put the pi together and paste it on the inside of the plate4 ,when arranged1 the pictures were found to be of ,thanksgiving flavor4 ,priscilla at the ,wheel1 ,the ,pilgrims ,going to ,church1 ,the ,first ,thanksgiving1 and others of the same type4 ,to the person making his pi first a small and delicious mince pie was awarded4 ,pencils and paper were then passed4 ,on one slip was written1 ,what ,i have to be thankful for1 on the other1 ,why ,i am thankful for it4 ,the slips were collected1 mixed up1 and distributed again4 ,each guest was asked to read the first slip handed him with the answer4 ,the result caused much laughter4 ,this was followed by a modification of the famous donkey game4 ,polly had painted a huge picture of a bronze turkey1 but minus the tail1 and this was pinned to the wall4 ,real turkey feathers with pins carefully thrust through the quills were handed about1 and each guest was blindfolded and turned about in turn4 ,to the one who successfully pinned a feather in the tail was given a turkey-shaped box of candy1 and the consolation prize was a copy of ,chicken-licken4 ,a pumpkin-hunt came next4 ,tiny yellow and green cardboard pumpkins were concealed about the apartment4 ,the yellow pumpkins counted five and the green two points4 ,at the end of the search a small pumpkin scooped out1 and filled with small maple sugar hearts1 was presented to the guest having the highest score1 and a toy book of1 ,peter1 ,peter1 ,pumpkin ,eater was awarded to the unfortunate holding the lowest score4 ,polly had determined to keep the refreshments very simple4 ,the day before ,thanksgiving she made an easy salad dressing by beating two eggs1 adding one-half a cup of cider vinegar1 two tablespoonfuls of sugar1 one teaspoonful of mustard and one-half a teaspoonful of salt1 and a tablespoonful of melted butter4 ,she placed the ingredients in a bowl1 set in a dish of water on the front of the stove1 and when they thickened she removed it from the fire and thinned with cream4 ,to make sandwiches1 she mixed the dressing with minced turkey1 added half a fine-chopped pepper1 and spread the mixture between dainty slices of bread4 ,the sugared doughnuts she made by beating two eggs1 adding one cup of sugar1 one cup of sour milk1 three tablespoonfuls of melted butter and flour1 sifted with one-half a teaspoonful of soda and two teaspoonfuls of baking powder1 to make the mixture thick enough to roll without sticking to the moulding board4 ,they were cut with a small cutter1 fried in deep1 hot fat1 and sugared plentifully4 ,rupert contributed ,corn ,popped in a ,kettle4 ,a large spoonful of lard and a teaspoonful of salt were placed in the bottom of a large kettle over a hot fire4 ,a cup of shelled popcorn was added and stirred briskly with a mixing spoon4 ,when the kernels began to pop1 the kettle was covered and shaken rapidly1 back and forth1 until filled with fluffy1 white popcorn4 ,with the fruit and grape-juice lemonade1 the sandwiches1 doughnuts and popcorn made a pleasing spread1 ,polly felt4 ,she served everything on paper plates and used paper napkins1 decorated with ,thanksgiving designs4 ,to ,make a ,tiny ,house ,oh1 ,little ,house1 if thou a home would'st be ,teach me thy lore1 be all in all to me4 ,show me the way to find the charm ,that lies in every humble rite and daily task within thy walls4 ,then not alone for thee1 but for the universe itself1 ,shall ,i have lived and glorified my home4 ,ruth ,merton4 ,home ,ideas and ,economies ,contributions to this department will be gladly received4 ,accepted items will be paid for at reasonable rates4 ,vegetable ,tarts and ,pies ,elizabeth ,goose of ,boston bestowed a great blessing upon ,american posterity when she induced her good man1 ,thomas ,fleet1 to publish1 in #agai1 ,the ,mother ,goose ,melodies1 many of which rhymes dated back to a similar publication printed in ,london two hundred years before4 ,is it strange that1 with this ancestral nursery training1 the cry against the use of pastry goes unheeded1 when as children1 we1 too1 have sung to us1 over and over1 the songs of tarts and pies8 ,the word tart comes from the ,latin word tortus1 because tarts were originally in twisted shapes1 and every country seems to have adopted them into their national menus4 ,that they were toothsome in those early days is shown in these same nursery rhymes1 and1 that tarts seemed to have been relished by royalty and considered worthy of theft is evinced in the rhymes1 ,the ,queen of ,hearts she made some tarts4 and1 ,little ,king ,boggen he built a fine hall1 ,pie-crust and pastry-crust that was the wall4 ,again this ancient lore speaks of ,five and twenty blackbirds baked in a pie1 and1 too1 there was that child wonder1 ,little ,jack ,horner who1 with the same unerring instinct of a water wizard with a willow twig1 could1 by the sole means of his thumb1 locate and extricate1 upon the tip of the same1 a plum from the ,christmas pie4 ,american tarts and pies are in a class of their own4 ,pies were very closely allied to pioneer1 and the ,colonial housewife of early days was forced to concoct fillings out of sweetened vegetables1 such as squash1 sweet potatoes1 and even some were made of vinegar4 ,yet the children still doted on these tempting tarts1 pies and turnovers1 for were they not trotted in babyhood on a ,cock horse to ,banbury ,cross1 ,to see what ,tommy can buy3 ,a penny white loaf1 a penny white cake1 ,and a two-penny apple pie4 ,the next time you have a few varieties of vegetables left over1 or wish a dainty luncheon side dish1 try making a tray of vegetable tarts with various fillings1 and they will prove as fascinating to choose from as a tray of ,french pastries4 ,while ,i have worked out these modern recipes in tempting ways of serving left-overs using common vegetables1 ,i will lay all pastry honors to our fore-mothers1 who passed on to us the art of pie-making4 ,proof as to the harmlessness of pies in diet is shown in the fine constitution of our ,american doughboy1 who is certainly a great credit to the heritage of pastry handed down by the ,daughters of the ,american ,revolution4 ,the moral of this discourse is that1 ,the child is father of the man1 and men dote on pies4 ,potato ,tarts a la ,gratin ,line round muffin pans with pastry circles as for other preserve tarts1 and fill with the following3 ,dice cold-boiled potatoes1 season with salt and pepper1 moisten with white sauce1 made of two tablespoonfuls of flour1 two tablespoonfuls of lard1 one cup of milk1 one-half a teaspoonful salt4 ,mix with this grated cheese4 ,fill the shells and sprinkle grated cheese on top4 ,bake a light brown4 ,baked ,onion ,dumplings ,parboil medium-sized onions in salted water4 ,cut half way down in quarters1 add salt1 butter1 and pepper4 ,place each on a square of biscuit dough or pastry1 rolled thin4 ,bring together opposite corners1 twist1 and place in a moderate oven to bake the onion tender4 ,serve with white sauce4 ,fresh ,tomato ,tart ,salad ,with a round cooky cutter make rounds of pastry4 ,cut an equal number with the doughnut cutter4 ,prick1 sprinkle lightly with grated cheese and bake a light brown4 ,place a plain shell on a crisp lettuce leaf1 add a slice of tomato1 not larger1 on top4 ,then pour on a little mayonnaise and place on top the tart shell with a hole in the center4 ,serve at once4 ,green ,tomato ,mince ,pie ,one peck of green tomatoes1 put through a food chopper4 ,boil1 drain and add as much water as juice drained out4 ,scald and drain again4 ,add water as before1 scald and redrain4 ,this time add half as much water1 then the following3-- #c pounds brown sugar #b pounds raisins #b tablespoonfuls nutmeg #b tablespoonfuls cinnamon #b tablespoonfuls cloves #b tablespoonfuls allspice #b tablespoonfuls salt ,boil all together1 and add one cup of vinegar4 ,cook till thick as desired4 ,put in jars and seal4 ,to one pint of this mixture add one cup of chopped apple and the juice and rind1 grated or ground4 ,sweeten to taste1 fill crust and bake as the usual mince pie4 ,evaporated apples may be used1 but grind before soaking and do not cook4 ,these pies will not harm children1 and are very inexpensive1 as compared to those made of mincemeat4 ,plum ,tomato ,preserves ,turnovers ,make a circle as big as a saucer1 or a square equal in area4 ,fill the center with plum tomato preserve and fold over matching edges1 either as a half circle1 or a triangle4 ,prick and bake4 ,turnovers are especially ideal as pies for fitting into lunch boxes1 and may be made of any sweetened vegetable preserve for school lunches4 ,king ,cabbage ,tarts ,use cabbage1 which has been boiled in salted water and seasoned with salt and pepper to taste4 ,make a white sauce and pour over1 mixing well with the cabbage4 ,fill round muffin pans lined with pastry circles1 sprinkle with cheese over the top and bake4 ,carrots may be used the same way1 omitting the cheese and using latticed strips of pastry over the top4 ,these will be hardly recognizable as such common vegetables4 ,m4 ,k4 ,s4 ,new ,ways of ,using ,milk ,while probably the best way of using milk is to drink it in its raw or pasteurized state1 many children and adults will not use it in that form4 ,in that case1 the problem is to disguise or flavor the milk in some way so that the food value will not be changed or destroyed1 and yet be more palatable than the natural product4 ,it has been found that children will drink flavored1 sweetened milk when they will simply not touch pure milk4 ,in order to demonstrate how universal the craving for sweetened1 cold drinks has become1 and how easy it is for the milkmen to cater to this demand1 ,prof4 ,j4 ,l4 ,sammis of the ,wisconsin ,college of ,agriculture conducted a booth at the #aiba ,wisconsin state fair and dispensed milk in twenty-five new1 pleasing1 and attractive ways over a soda fountain4 ,thousands of these milk drinks were consumed1 and a report from a ,tennessee county fair also revealed that #aj1jjj similar drinks were sold there by an enterprising dairyman4 ,there is nothing elaborate about the proposition4 ,if these drinks are to be prepared in the home1 and the whole question is largely one of increasing the home consumption of milk1 ,professor ,sammis declares3 ,take any flavor that happens to be on the pantry shelf1 put a little in a glass1 add sugar to taste1 fill the glass with milk1 and put in some ice4 ,that is all there is to it4 ,be sure that the milk is drank very cold1 when it is most palatable4 ,vanilla is a very good flavor4 ,it is not even necessary that whole milk be used1 as condensed milk will do very well4 ,simply dilute the condensed milk with an equal volume of water1 and use as whole milk4 ,condensed milk1 however1 has a cooked flavor found objectionable by many1 and1 in that case1 a suitable substitute is powdered milk1 which has no such cooked flavor4 ,to prepare a powdered milk drink1 put the flavor into the receptacle first1 then the sugar1 and then the powdered milk with a little water4 ,beat the powdered milk with an egg beater until it is wet through1 and then add the rest of the water1 finishing with the ice4 ,by adding fruit colors these various milk drinks can be given a changed external appearance1 and wise is the mother who will prepare them often when her children show an inclination not to drink enough milk4 ,served at the table1 they attract every member of the family4 ,these milk drinks are no more expensive than many of the more watery and less useful compounds1 so often substituted4 ,soda fountains might well consider these various forms of sweetened and flavored milk to attract new trade4 ,at the fountains the various flavoring syrups would naturally be used1 and no sugar is necessary4 ,and instead of clear water1 carbonated water is used4 ,the variety of these drinks is limited only by the ingenuity of the dispenser4 ,w4 ,a4 ,f4 ,old ,new ,england ,sweetmeats ,crab-,apple ,dainty ,wash seven pounds of fruit and let boil with a little water cubes4 ,prepare a syrup of sugar and water1 about three pounds of sugar and a pint-and-a-half of water1 in which simmer the juice and rind 7cut into strips7 of two lemons4 ,drop the pumpkin cubes into the syrup and let simmer1 carefully1 until the pumpkin is translucent4 ,dip out the pumpkin and pack in ordinary preserve jars2 pour over the syrup and lemon and close the jars4 ,s4 ,a4 ,r4 99 99 99 twenty minutes1 or till the orange is cooked4 ,add five 7#e7 pounds of granulated sugar and let boil until a little in a cold saucer will jell4 ,this recipe has never been in print to my knowledge and boiling water8 ,should ,corn on the cob be put on in cold water and allowed to simmer for several minutes after it comes to a boil1 or be put on in boiling water and boiled five minutes8 ,should ,chicken1 ,turkey1 or other ,fowl be covered during roasting8 ,can you give a clear and up-to-date article on correct ,table ,service8 ,to ,boil ,potatoes ,very young1 new potatoes--the kind hardly bigger than walnuts1 should be put on in cold water and brought quickly to a boil1 for potatoes so young as to be immature contain more or less of a bitter principle1 which is desirable to get rid of in the cooking4 ,potatoes in their prime1 as from ,september to ,march1 are best put on in boiling1 salted water4 ,later in the spring1 when the potatoes begin to sprout and shrivel they ought to be put on in cold water and brought1 as slowly as possible1 to a boil1 or allowed to stand in cold water for some hours before cooking4 ,to ,boil ,corn ,it is usually preferred to put on the corn in cold water1 bring to a boil1 and let simmer until done4 ,but to steam the ears will give1 in our opinion1 the best results4 ,should ,chicken ,be ,covered ,while ,roasting8 ,decidedly not2 it spoils the flavor not only of chicken and turkey1 but of any prime joint of meat to bake it in a covered pan4 ,the covered pan is properly used for braising only1 for the tough cuts which have to be braised call for the combination of baking and steaming which results from the covered pan4 ,all kinds of poultry1 and all prime joints of meat should be placed on a rack in an uncovered roasting pan1 put into a very hot oven for the first ten or fifteen minutes1 and then have one or two cups of water poured over them1 mixed with fat if the meat is lean1 this water to be used for basting every ten or fifteen minutes4 ,the rack in the pan serves both to allow a circulation of air around the meat1 and to keep it from touching the water4 ,it is this circulation of air that gives the fine flavor of the properly roasted meat1 and the frequent opening of the oven door for the basting serves to supply the fresh air needed for the best results4 ,instructions on ,table ,service ,the ,up-to-,date the food chopper4 ,stir into the white sauce2 heat while stirring constantly1 but do not allow the mixture to boil1 and add one tablespoonful of vinegar just before serving4 ,crisp ,fried ,potatoes ,we think your trouble is not so much the temperature of the fat1 which should be about #cej deg4 to #cge deg4 ,fah41 as it is that potatoes1 to be crisped by deep frying1 should first be soaked in something between a cake and a biscuit dough--not at all like pie crust4 ,deep-,dish ,apple ,pie ,this is the genuine ,english ,apple ,pie--they would call ours an apple tart4 ,it is made in oval baking-dishes of thick yellow ware1 about two and one-half or three inches deep1 and with flat rims an inch in width4 ,the first thing to do is to invert a teacup--preferably one without a handle--in the bottom of the dish1 then core and pare sour1 juicy apples--any number1 from six to a dozen1 depending on the size of the family and the dish--and divide them in eighths4 ,arrange these in alternate layers with sugar in the dish1 with a generous sprinkling of whole cloves over each layer1 and pile1 layer on layer1 until not another bit of apple can go in anywhere without toppling out4 ,the apples are piled up as high again as the depth of the dish1 or higher4 ,now lay over all a very rich biscuit dough1 lightly rolled out to one-fourth inch in thickness4 ,decorate this with leaves1 a temperature of from #cej deg4 to #cge deg1 ,fah4 for from forty minutes to an hour4 ,these temperatures are approximate1 and are in accordance with the general rules for oven temperature1 but this has to be adapted to the recipe4 ,the more sugar used the lower should be the temperature1 to avoid burning1 and especially when molasses is used does the need to decrease temperature become imperative4 ,the more butter used the higher should be the temperature1 at least1 until the cake is set1 to keep it from falling4 ,cakes with much butter need the greatest heat at first1 and then a reduced temperature4 ,so do all cakes of small size4 ,large cakes are better at a uniform temperature1 not so high as the average4 ,a different flavor is produced1 especially in very rich cakes with a good many eggs1 when put into a cool oven and baked with gradually increasing heat1 from that developed by a high initial temperature and then a decreased heat4 ,the quality of the flour and shortening also affect the temperature and time needed in baking4 ,it is a good safe thing to follow the rules1 and to temper them with judgment4 ,when the cake is just firm in the center1 and has shrunk from the sides of the pan1 it is done1 no matter what the temperature has been or how long it has baked4 ,but you will always get your cake at this condition1 more surely and safely1 by
